Chesapeake Chowder
18 Chincoteague oysters, or Blue Point or Kumamoto
4 tablespoons butter
1 medium leek, diced, white part only
1 medium onion, diced (about 1 cup)
3 shallots, peeled and minced
1 tablespoon fresh picked thyme leaves
5 strips bacon, diced
3 teaspoons all-purpose flour
3 cups fish stock
2 cups clam juice (bottled is fine)
1/2 cup dry white wine
2 large potatoes, peeled and diced (about 2 cups)
2 ounces Virginia ham, finely diced
2 cups fresh-shucked corn
1 cups heavy cream
1/4 cup sherry
4 drops hot sauce (recommended: Tabasco)
1 pound rockfish or striped bass fillets, skinned and cut into 1-inch cubes
16 ounces jumbo lump crab meat (picked for shells)
2 tablespoons chopped chives
Sea salt
Cracked pepper
Shuck the oysters and strain the liquor through a fine mesh sieve!. Reserve oysters and liquid separately!.
In a saute pan, add the butter and heat until bubbling!. Add the leeks, onions, shallots, and thyme and cook until transparent!. In a separate large saucepan over medium-high heat, add the bacon and cook until crisp!. Lower the heat, add the flour and cook the "roux" for 5 to 6 minutes!. Add the fish stock, clam juice, oyster liquor, white wine, potatoes, and Virginia ham!. Raise heat to high and bring to a simmer!. Add the cooked leek-onion mixture and reduce all by 1/4!. Add the corn and cook for 4 minutes!. Add the cream, sherry, and hot sauce and cook 4 more minutes, stirring so as not to scorch!. Add the rockfish, crabmeat and oysters and cook a minute or two!. Check salt and pepper, noting that the ham is very salty so the chowder won't need much!.
Serve in 6 warm soup terrines and garnish with the chopped chives!. Serve with corn breadsticks or common crackers!.
Scalloped Potatoes with Ham
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
Salt and pepper
1 tablespoon butter
2 medium onions, thinly sliced
4 large russet potatoes, peeled and thinly sliced
12 ounces 1/4 inch sliced baked ham
2 cups grated cheddar cheese
Preheat oven to 350 degrees!. Butter a baking dish!. In a saucepan, melt 2 tablespoons butter over medium high heat!. Stir in flour and cook for 1 minute!. Remove saucepan from heat and whisk in milk!. Return pan to heat and bring to a simmer while stirring!. When sauce has thickened remove from heat, season with salt and pepper and set aside!. In a skillet, cook onions in melted butter until golden brown!. Season with salt and pepper!. Spread 1/3 of the white sauce in bottom of baking dish and top with half of the potatoes!. Spread out half of the onions, ham, cheese And another third of the sauce!. Season with salt and pepper!. Continue layering ingredients, ending with the remaining cheese on top!. Here's what I make!.
Wash and slice potatos (12 small - 6 large)
Boil them on the stove for ten minutes!.
Drain and place in pan!. I use a baking stone!.
Finely slice onions small pieces of onion about 1/4 of a small onion!.
Sprinkle onions over potatos
Sprinkle ham over potatos (I buy the chopped packaged ham)
Sprinkle with Colby jack cheese
Randomly place spoon fulls of Reduced fat sour cream over potatos
Slice a stick of margarine and randomly place on potatos
In a container mix 1 cup skim milk with 2 Tbs flour and 1 tsp salt!. Whisk until lumps are gone!. Pour over potatos and bake one hour or until cheese is melted!.

Au Gratin Potatoes And Ham
6 Med potatoes, peeled & sliced!.
1 med!. onion, coarsley chopped
8oz cooked ham, cubed
4 oz shredded american cheese
1 can cream of mushroom soup
1/ 2 C milk
1/4 - 1/2 ts thyme
In slow cooker, layer 1/2 of the potatoes, onion, ham and cheese; repeat layers!.
In small bowl, combine soup, milk and thyme; pour over top!.
Cover; cook on high setting for 3 hours!.
Reduce to low setting; cook for 2 to 2 1/2 hours or until potatoes are tender!.
Ham Casserole
4-5 thick sliced potatoes (whatever will fit in ur pan, to taste)
thick sliced ham (to cover potatoes)
1 can whole kernnel corn Sp
can green beans (some liquid drained off
2 Cans stewed tomatoes
2 sliced onions, sliced into rings
1-2 cloves garlic, pressed
pepper, to taste
