Depends on what kind of omelette!. I've had shrimp omelette before and the way they make it is to saute the shrimp in butter first then pour the egg mixture!.

If you're making omelette with mushrooms and peppers, you can put the rest of the ingredients last!.

For me, I like to saute my vegetables very lightly to take some of the raw taste out, then I pour the beaten eggs!. Then I cook the eggs until it is not runny but not overcooking the eggs because it tends to get hard!.

I've seen Chinese cooks beat the eggs with some cooking oil added to it!. I've tried it - the eggs never stuck to the pan, and the eggs came out fluffy!.Www@FoodAQ@Com

I had my seasonings and some of the ingredients like green onion in while I am whipping the eggs!. If I want my center fluffy I add the meat, veggies and potatoes in midway into cooking so when I flip the egg to cover my ingredients I have a nice center!. Then now is a good time to sprinkle the grated cheese and let it melt and then a small dash of paparika just for looks!.Www@FoodAQ@Com

If its stuff that you want within the egg mixture!.!.!. add it while you're mixing!. Depends what you're adding!. If its something like cheese or herbs (something grainy/powdery or something like that), I just mix it in with the eggs before cooking!. If its something chopped like tomatoes, I wait for the omlette to start taking shape, but when its still watery, and then put them on the omelette and fold it over the ingredients!.Www@FoodAQ@Com

I personally like to sautee my ingredients first!.!.!.and set aside!. Then I do the omelet!.!.!.and when half cooked I put them in and then add the cheese!

Make sure the pan is hot when you first add egg!.!.!.and then quickly turn it down so it doesn't burn!. lift around the edges and tilt the pan and let the raw egg flow to the sides and under again!. fold over when almost done!. When it is ALMOST DONE!.!.!.fold over and take off the stove and cover tightly!.!.!.let sit for about 5 minutes and it will be perfect!Www@FoodAQ@Com

When the eggs are just a bit runny in the middle, it's time to add the 'fillings' !.!.!. then fold and let sit for about two minutes before serving!.
