Here is the best, tastiest way to cook them!. Get a large bag- ziploc, paper- doesn't matter!. Put a cup or so of flour in it!. Add salt, pepper, garlic and onion powder (if you have them), cayenne pepper- shake it to distribute the seasoning!. In the meantime, get your skillet ready!. You want enough oil to practically cover the chicken!. Turn your burner on to begin heating your oil!. It must be hot before you put the chicken in!. Put your drumsticks in the flour bag and shake to coat!. Place the drummies in the hot oil!. Reduce the fire under the chicken when they get going good!. You want the oil to remain hot enough, but not so hot you burn the outside before the inside is done!. They must cook at least 20 minutes!. To check for doneness- stick a fork in one (I am not kidding about this) and twist it!. If the meat comes off easy they are done!. Remove from the skillet and let them drain on a couple of paper towels for a few minutes!. Let me know if you like them!. This looks like a lot of information, and it is, but most of is just FYI- you probably know most of this!. The actual cooking isn't bad!.Www@FoodAQ@Com
Fried Chicken
Recipe courtesy Alton Brown
Show: Good Eats
Episode: Fry Hard 2: The Chicken (Fried)
1 broiler/fryer chicken, cut into 8 pieces
2 cups low fat buttermilk
2 tablespoons kosher salt
2 tablespoons Hungarian paprika
2 teaspoons garlic powder
1 teaspoon cayenne pepper
Flour, for dredging
Vegetable shortening, for frying
Place chicken pieces into a plastic container and cover with buttermilk!. Cover and refrigerate for 12 to 24 hours!.
Melt enough shortening (over low heat) to come just 1/8-inch up the side of a 12-inch cast iron skillet or heavy fry pan!. Once shortening liquefies raise heat to 325 degrees F!. Do not allow oil to go over 325 degrees F!.
Drain chicken in a colander!. Combine salt, paprika, garlic powder, and cayenne pepper!. Liberally season chicken with this mixture!. Dredge chicken in flour and shake off excess!.
Place chicken skin side down into the pan!. Put thighs in the center, and breast and legs around the edge of the pan!. The oil should come half way up the pan!. Cook chicken until golden brown on each side, approximately 10 to 12 minutes per side!. More importantly, the internal temperature should be right around 180 degrees!. (Be careful to monitor shortening temperature every few minutes!.)
Drain chicken on a rack over a sheet pan!. Don't drain by setting chicken directly on paper towels or brown paper bags!. If you need to hold the chicken before serving, cover loosely with foil but avoid holding in a warm oven, especially if it!?s a gas oven!.Www@FoodAQ@Com

Do you have a small charcoal grill!? Boil chicken drumsticks or wings in a pot for about 30 minutes!. Transfer them to a low-medium hot grill!.!.brush with your favorite store-bought BBQ sauce and the sauce will thicken and stick to the chicken!. Turn them and brush until they're covered and have some good grill marks!.
