The easiest thing I make is enchiladas!. Get a can of pinto or black beans, tortillas, cheese, and a can of enchilada sauce!. Wrap the beans & cheese in the tortillas, and cover with sauce & more cheese!. Cover with aluminum!. cook at around 350 for a while (half hour!? until the sauce is boiling)!. If I'm really short on time, I just put it in a microwaveable dish & microwave for a few mins!.
I also make a really good vegetable chili!. quick and VERY easy to prepare, but it takes 6+ hours to cook!. You can make a LOT and freeze some for later!.
I mix:
fake meat (morningstar or boca) crumbles
raw kidney beans
spaghetti sauce
chili seasoning mix
onions
tomatoes
mushrooms
garlic
green pepper
any other veggies I feel like- carrots, celery, zucchini - whatever
add raw peanuts for extra protein & yumminess
sometimes a hot pepper
cover with water!. put in slow cooker and cook until the beans are cooked and all veggies are soft!. eat on pasta, tacos, tortillas, rice, or by itselfWww@FoodAQ@Com
