What is a good recipe for tuna patties?!


Question: What is a good recipe for tuna patties!?
I have been trying to make them with tuna, egg, potato and corn, but they havent been working!. They keep crumbling and have no flavour!.

Does anyone have a good recipe idea!?

Tuna Patties
1 (6 ounce) can tuna
1 small potato, boiled and mashed
1/2 cup chopped onion
1 egg
1/4 cup breadcrumbs
1/4 teaspoon parsley
1/3 teaspoon cayenne pepper (I use more sometimes, but it really depends on how much you enjoy cayenne pepper!)
1/3 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon olive oil, to saute onion
1 tablespoon olive oil, for cooking patties
Directions
Boil potato until soft (as you would for mashed pots!.); Mash!. Saute chopped onion for 2-3 minutes!. add onion to mashed potato!. Add cayenne pepper to the mashed potato as well; mix thoroughly!. Open can of tuna and drain liquid!. Put tuna in a medium bowl!. Add potato and stir until mixed through!. add egg and mix through again!. Add the bread crumbs, parsley, garlic powder, salt, and pepper and mix well with hands (its really the best way to get all of the ingredients mixed VERY well!.) If you feel that the mixture is too moist (due to size differences in eggs), you may add some more breadcrumbs (a small amount!), but BE CAREFUL! Do not make mixture too dry as you may encounter breakage while cooking patties! Put olive oil in a nice sized frying pan, and rub olive oil over the pan with cloth; heat on medium-high!. Form patties (2-3, depending on how large or small you wish to make them)!. Put patties in the heated pan and cook 6-8 minutes on each side, depending on how large you made each patty!. If you made 3 patties, 6 mins per size should be just fine!. Brown nicely on both sides! You may need to add a little more oil while cooking, but do not add too much!

TUNA PATTIES
2 6 oz!. cans of tuna in water
1 6oz!. pkg!. Stove Top Chicken Stuffing mix
1 cup shredded cheese (cheddar or any kind)
1/2 cup shredded carrots
1/3 cup mayo or miracle whip
2 T sweet relish or pickles chopped
3/4 cup water
Drain the tuna!. Mix tuna with all other ingredients!. Cover bowl and refrigerate for 10 minutes!. Heat large non stick skillet on medium heat!. Get about 1/3 cup for each patty!. Form it into a ball and place in pan!. Gently press with spatula to flatten into patty!. Cook for 3-5 minutes on each side or until browned!.

Tuna Patties with Dill Sauce - omit dill sauce if wanted

INGREDIENTS
2 parsnips, peeled and cut into 1/2 inch slices
2 egg whites, lightly beaten
1/2 cup soft bread crumbs
1/4 cup finely chopped green onions
1 tablespoon dried parsley flakes
2 teaspoons lemon juice
1/2 teaspoon grated lemon peel
1/2 teaspoon dill weed
1/4 teaspoon pepper
2 (6 ounce) cans light water-packed albacore tuna, drained and flaked
2 teaspoons olive or canola oil

DILL SAUCE:
1/2 cup fat-free mayonnaise
1 teaspoon lemon juice
1 teaspoon grated lemon peel
1/2 teaspoon dill weed


DIRECTIONS
Place parsnips in a saucepan and cover with water; bring to a boil!. Reduce heat; cover and simmer for 30-35 minutes or until tender!. Drain well!. Place parsnips in a food processor or blender; cover and process until smooth!. In a bowl, combine 1 cup pureed parsnips, egg whites, bread crumbs, onions, parsley, lemon juice and peel, dill and pepper!. Add tuna and mix well!.
Shape into eight 1/2-in!.-thick patties (patties will be soft)!. In a large nonstick skillet, heat oil over medium heat!. Cook patties for 5-6 minutes on each side or until lightly browned!. Combine the sauce ingredients in a small bowl; serve with tuna patties!.Www@FoodAQ@Com
