Is it possible to make a soup with lettuce?!
It's that time of the week again, where I'm going veg crazy to clear out the fridge before a shop!. I've got carrots, onions, garlic, and TONS (litterally tons) of those little gem lettuce things!. I think we even have some romaine lettuce!.

Here is a recipe for actual lettuce Soup
Lettuce soup
Ingredients
50g Butter
8 Spring onions, trimmed and chopped
4 small butterhead Lettuce
2 baby gem lettuces
800ml chicken stock, or half milk, half stock
small bunches soft herbs, such as mint, basil and chervil
good squeeze lemon juice
2 tbsp double cream
Method
1!. Melt the butter in a heavy bottomed saucepan and sweat the spring onions for about 5 minutes, until completely soft!.
2!. Trim the base off each lettuce then slice or tear it and add it to the buttery onions!. Heat the lettuce until it wilts and softens in its juices!.
3!. Add the herbs and warm stock!. Season and blend to a smooth soup using a stick blender or in a food processor!. Taste and add lemon juice, seasoning and add the cream if you want to use it!.

3 seeded tomatoes, diced
1/4 lb butter
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped red bell pepper
1/2 cup chopped yellow bell pepper
1/4 cup diced garlic
1/2 cup flour
1 quart chicken stock
1 pint heavy whipping cream
1 pinch thyme
1 pinch basil
salt and black pepper
1 cup toasted crouton
Directions
1In a heavy bottom Dutch oven melt butter over medium high heat!.
2Add bacon and sauté two to three minutes!.
3Add onions, celery, bell pepper and garlic!.
4Sauté three to five minutes or until vegetables are wilted!.
5Sprinkle in flour and, using a wire whisk, blend well into bacon/vegetable mixture!.
6Add chicken stock, stirring constantly, until well incorporated!.
7Add lettuces and tomatoes and fold well into the soup!.
8Add heavy whipping cream!.
9Season to taste using thyme, basil, salt and pepper and allow to cook for an additional fifteen minutes!.

If you've got hamburger to go with your onions and garlic you might try this: A taco pizza!. If you can make bread dough you can make pizza dough!. Preheat oven to 425!. You can make your pizza dough while the oven's heating up!.You'll need about 1/2 lb!. of shredded medium REAL cheddar cheese!. Brown well in a large skillet a lb!. of HB (drain fat) Then put a 15 ounce can of diced tomatoes, a diced bell pepper, 1/4 clove of garlic (minced) and a medium sized onion (diced) into the skillet and blend all of the ingredients together cooking for about 10 more minutes with about 2 tbsps of EVOO(extra virgin olive oil) Using a 12" by 18" by 1" cookie sheet sprayed well with Pam, put your pizza dough into the pan!. Pour all of the skillet contents onto the pizza dough and spread them out evenly!. Sprinkle the cheese evenly over the surface!. Lower oven temp!. to 400 and bake for about 20 minutes!.
