yes you sure do!. most bread needs to rise 2 times anyways to get the highest quality bread loaf!.

if you defrost a loaf of bread and bake it right away it most likely would not rise more and you would have something similar to a hokey puck!. when i worked with frozen dough in a bakery we defrosted the dough then put it in the proof box for the second rise to allow the yeast to do the magic on the bread and make a light and airy loaf of bread!.Www@FoodAQ@Com
