Do these tiramisu ingredients sound correct?!


Question: Do these tiramisu ingredients sound correct!?
475g mascarpone
Pack of lady fingers
2 cups of expresso coffee
6 eggs
3 tablespoons of sugar!.
cocoa powder!.

I'm mostly worried about how much eggs there are, i feel it's too much so i typed out the rest of the recipe so you can see how much of the other ingredients are used to see if it's the correct amount of eggs!.

Yes these ingredients are correct!.!.!.and this girl was schooled in my Italian/Slovakian grandma's kitchen so i know for sure!!! Unless you are pregnant or have been told to stay away from raw products then the eggs are nothing to worry about!. Just make sure they are fresh!. The eggs are cut in with the cheese so once you get everything in a bowl you'll see why you'll need 6 eggs!. Thats a lot of mascarpone and all those eggs will bind it together!.

I don't use ANY eggs in my tiramisu recipe:

Ing:

2 3-oz packages lady fingers, split
1/4 cup brewed espresso or strong coffee
1 8-oz carton mascarpone cheese
1 cup whipping cream
1/4 cup powered sugar
1 tsp vanilla
1/3 cup chocolate liqueur
1 oz white baking squares or white baking bars, grated
1 oz bittersweet chocolate, grated
unsweetened cocoa powder
chopped chocolate covered coffee beans (optional, but SO needed!)

Dir:

*Line bottom of 8x8x2-inch baking pan with enough ladyfingers to cover, cut to fit!. Drizzle half of the espresso over ladyfingers!.
*In a medium mixing bowl beat the mascarpone cheese, whipping cream, powdered sugar and vanilla just until stiff peaks form, scraping sides of bowl occasionally!. Beat in chocolate liqueur just until combined!.
*Evenly spread half of the mascarpone mixture over lady fingers!. Sprinkle white chocolate and bittersweet chocolate over mascarpone mixture!. Top with another layer of ladyfingers, remaining espresso, and remaining mascarpone mixture!.
*Cover and chill for at least 6 hours!. Sift cocoa powder over top of dessert!. If desired, garnish with chocolate-covered coffee beans!.Www@FoodAQ@Com

this is the one i use


6 eggs, separated
3 tablespoons white sugar
1 pound mascarpone cheese
2 tablespoons brandy
1 teaspoon vanilla extract
1 1/2 cups strong brewed coffee, room temperature
30 ladyfinger cookies
8 ounces finely chopped bittersweet chocolate






In large mixing bowl, beat egg yolks and sugar with electric mixer until light yellow, 1 minute!. Beat in mascarpone, brandy and vanilla until smooth!. In a separate bowl, beat egg whites until stiff, but not dry!. Fold egg whites into mascarpone mixture!.
Quickly dip ladyfingers, one at a time, in cooled coffee and arrange them in a 9x13 inch baking dish!. Use 15 cookies to cover the bottom of the dish!. Spread half the mascarpone mixture over the cookie crust and sprinkle the chocolate on top!. Repeat the soaked cookie and cheese layers!.
Cover tightly with plastic wrap and refrigerate 4 hours or overnight before serving!.Www@FoodAQ@Com

yes that's correct but you can cut back the eggs if you like!. It's a very rich dish that's why there are a lot of eggs!.

also you don't want the soft lady fingers, you want the hard ones (they are actually more like cookies or biscotti)!. The soft ones turn to mush if you try to use them, but the hard ones will soak up the liquid and be just right!.

If you can't find the hard lady fingers then buy the soft ones and leave them out on the counter unwrapped to get stale!.Www@FoodAQ@Com

I have heard (from my grandmother) to use the egg yolks and not the whites but other than that it sounds right!.Www@FoodAQ@Com
