Pancetta is an Italian bacon that is cured with salt, pepper, and other spices, but is not smoked!. Unlike English and American bacon, which are taken from the sides and belly of the pig, may be smoked, and are usually cut into slices, pancetta comes only from the belly, is salt-cured but not smoked, and is generally sold rolled up into sausage shapes!.

I find it in the deli section of my market!.

Thin sliced bacon is a good substitute!.

pancetta is an italian cured meat!.!.!.it's similar to american bacon!.!.!.from the same cut of pork!.!.!.but it's not smoked!.!.!.it's cured in spices like garlic and peppercorns!.!.!.sometimes it may have bits of pistachio in it!.!.!.!.you find it in the gourmet meats dept of your supermarket!.!.!.if you don't have a market with that type of counter try an italian specialties store!.!.!.good luckWww@FoodAQ@Com

It is the Italian version of bacon!. I prefer to use thinly sliced bacon in its place!.Www@FoodAQ@Com
