I just picked a bunch of blueberries...how can I use showcase them in my dinner?!

A blueberry sauce is excellent with pork or chicken!. Sautee up some diced shallots or onion and garlic in some olive oil, toss in the blueberries, some thyme and salt and pepper!. Cook until sauce like, but still having some texture from the berries, pour over grilled meat!. Its really nice!.

Here are a few ideas for a bluberry themed meal:
SALAD
Apple, Pear and Blueberry Salad
3 tbsp!. vegetable oil
2 tbsp!. fresh mint vinegar
1 tbsp!. water
1/2 tsp!. Dijon mustard
1/2 tsp!. honey
1/8 tsp!. salt
2 c!. shredded Boston lettuce
1 c!. torn watercress
4 Boston lettuce leaves
1 med!. size Red Delicious apple, core & thinly sliced
1 med!. pear, cored & thinly sliced
1/2 c!. fresh blueberries
2 tsp!. chopped fresh mint
Combine first 6 ingredients in a small bowl, stirring with a wire whisk until blended; set aside!.
Combine shredded lettuce and watercress in a medium bowl!. Pour 1/4 cup reserved vinegar mixture over greens, tossing gently!.
Place lettuce leaves on individual serving plates; spoon tossed greens on leaves!. Arrange apple and pear slices alternately on leaves!. Sprinkle blueberries and mint over salads, and spoon remaining dressing over fruit!.
ENTREE
Chicken Breasts with Blueberries
Ingredients
4 Boneless skinless chicken breast halves
1 tbsp Salad oil
1/2 cup Apricot jam
3 tbsp Dijon mustard
1/2 cup Frozen unsweetened blueberries
1/3 cup White wine vinegar
Watercress sprigs
Preparation
Rinse chicken and pat dry!. Heat oil in a 10" - 12" skillet over medium-high heat!. Add chicken; cook, turning as needed, until browned on both sides (about 6 minutes)!.
Meanwhile, in a small bowl, stir together jam and mustard!. Spread jam mixture over tops of browned breasts; sprinkle with blueberries!. Reduce heat to medium-low, cover and cook until meat is no longer pink in thickest part; cut to test (about 15 minutes)!. With a slotted spoon, lift chicken and blueberries to a platter; keep warm!.
Add vinegar to pan, increase heat to high, and bring to a boil!. Boil, stirring occasionally, until sauce is reduced by a third and thickened (about 5 minutes)!. Pour sauce over chicken; garnish with watercress!.
COCKTAIL

Ingredients:
- 1 1/2 oz!. citrus rum
- fresh mint leaves
- fresh blueberries
- crushed ice
Garnish: blueberries
Muddle mint and blueberries, then add citrus rum and shake!. Pour over crushed ice in a cocktail glass and garnish with blueberries!.
NON-ALCOHOL DRINK
Iced Blueberry Tea
Add two tablespoons blueberry drink base (below) to each glass of prepared iced tea!. Stir well and garnish with a lemon slice!. Guaranteed to wow your guests!.

2 cups water
1 cup sugar
Place blueberries in a saucepan with water!. Bring to a boil, reduce heat and simmer 10 minutes!. Set sieve or colander lined with cheesecloth over a bowl and pour in the blueberry mixture!. Gently press out the juice with a spoon or by twisting the cheesecloth!. Discard the pulp and measure the juice into saucepan!. Add 1/2 cup sugar for each cup of juice and cook over medium heat, stirring until sugar is dissolved!. Bring to a boil and cook 2 minutes!. Chill and pour into covered jar!. Turkey with Blueberry Pan Sauce
1/4 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
1 pound turkey tenderloin (see Ingredient note)
1 tablespoon extra-virgin olive oil
1/4 cup chopped shallots
1 tablespoon chopped fresh thyme
2 cups blueberries
3 tablespoons balsamic vinegar
Preheat oven to 450 degrees F!. Whisk flour, 1/2 teaspoon salt and pepper in a shallow dish!. Dredge turkey in the mixture!. (Discard any leftover flour!.)
Heat oil in a large ovenproof skillet over high heat!. Add the turkey; cook until golden brown on one side, 3 to 5 minutes!. Turn the turkey over and transfer the pan to the oven!. Roast until the turkey is just cooked through and no longer pink in the middle, 15 to 20 minutes!. Transfer the turkey to a plate and tent with foil to keep warm!.
Place the skillet over medium heat!. (Take care, the handle will still be very hot!.) Add shallots and thyme and cook, stirring constantly, until the shallots begin to brown, 30 seconds to 1 minute!. Add blueberries, vinegar and the remaining 1/4 teaspoon salt; continue cooking, stirring occasionally and scraping up any brown bits, until the blueberries burst and release their juices and the mixture becomes thick and syrupy, 4 to 5 minutes!. bone-in center-cut pork chops, trimmed of fat
3 tablespoons reduced-sodium soy sauce
2 tablespoons dry sherry (see Ingredient note)
2 cloves garlic, crushed
1 teaspoon brown sugar
1/4 teaspoon crushed red pepper
1 cup fresh blueberries, coarsely chopped
1 shallot, chopped
1 serrano chile, seeded and minced
1 tablespoon chopped fresh cilantro
1 tablespoon lime juice
1 teaspoon minced fresh ginger
1/4 teaspoon salt
To marinate: Place pork chops in a large sealable plastic bag!. Whisk soy sauce, sherry, garlic, brown sugar and crushed red pepper in a small bowl!. Add the marinade to the bag, seal and turn to coat!. Marinate in the refrigerator for at least 2 hours or overnight!.
To prepare relish: About 20 minutes before grilling the pork, combine blueberries, shallot, chile, cilantro, lime juice, ginger and salt in a small bowl!.

it sounds crazy but you could make blueberry BBQ sauce!.!.!.its easy cook down your bluberries on a medium/low heat with 1/2 cup of brown sugar and 1/2 cup of water for about 10 mins then add kraft honey BBQ sauce and 2 tablespoons of mustard, stir and simmer for another 10 mins on a low heat!.
this goes great with pork, ribs, smoked sausage, or baked fish if you really want to get creative!.
