I bought some mutton chops today, anyone got any good recipes?!

Yes!. You should dust them with flour and pepper!. Fry them off and on top of vegetables of your choice, put them in a slo-cooker!. Add lambstock and herbs of your choice, I like rosemary and thyme, or taragon, but it is up to you, just enough to cover and simmer for as long as you can!. When ready, check seasoning and thicken sauce if required!.
Serve with baked or boiled or mashed potato!.
you could add wine to the recipe if your taste or budget can stretch that far!. Just remember to cook the wine out so that there is no alcohol left for children!.Www@FoodAQ@Com

Lancashire Hotpot
800g desiree or romano potatoes , 2/3 sliced quite thick, 1/3 sliced about the thickness of a £1 coin
olive oil
2 large onions , roughly chopped
8-12 mutton or lamb chops depending on size, or 4 mutton or lamb chump chops, trimmed, or, best end of neck
2 lamb kidneys (optional)
butter melted (optional)
pickled red cabbage or steamed green veg to serve
Heat the oven to 200C/fan 180C/gas 6!. Spread the thick slices of potatoes in a baking dish that's about 7cm deep and wide enough to hold the meat in a single layer!. Season!.
Heat a little oil in a large, heavy frying pan and fry the onion gently, turning regularly, for at least 10 minutes until translucent and pale gold!. Use a slotted spoon to transfer to a plate!. Add more oil to the pan if necessary and brown the chops on each side!.
Put the chops, kidneys and bay leaves on top of the potatoes and scatter on the thyme, if using!. Season!. Spread the onion over the meat and season again!. Pour 200ml water into the pan and stir and scrape over the heat to release the sticky debris from the bottom!. Pour into the dish, adding more water if needed, until the liquid comes halfway up the contents of the dish!.
Overlap the thinly sliced potatoes in circles over everything!. Brush with more oil or melted butter!. Cover with a double layer of foil and cook for 30 minutes!. Turn the temperature down to 150C/fan 130C/gas 2 and cook for a further 2 hours, then remove the foil to brown the potato slices lightly - turn the oven back up to 180C/fan 160C/gas 4 to help them along!.Www@FoodAQ@Com

Ah uncounted sheep!.
I would start by preparing them the way you would a good prime rib!. Rather than broil them I would boil them in shallow liquid of red wine similar to doing prime rib!. (Note this is cooking wine)!.
Now you can add spices to season to the taste but I'm partial to fresh cloves (the ones that have the little prongs so you can press them in at random for added flavour!.
also I would add an orange round (cut similarly to pineapple), and a sprig of parsley!.
while that is cooking, prepare a fresh garden salad using baby spinach rather than iceberg lettuce!. Run through the garden with this using fresh veggies (baby carrots, baby corn, baby peas etc) but for the dressing, I would suggest a mild vinegrette!.
For potato I would suggest baked which you would want to start prior to the mutton chops!.

If I do not BBQ mutton ribs, I usually pot roast them!.
This is how I pot roast them;
First place them in a pot with a heavy lid, and then add a little cooking oil just to prevent sticking!.
Now on a high setting let them roast a while, adding salt to taste and a spoonful of instant coffee once there is enough moisture to turn down the heat and let it simmer!.
( Usually mutton chops give off some moisture once they start frying)
Add a little water if you need to and let them simmer!.
I like o add some spice as well, but I would suggest you add whatever you think you would like!.
(BBQ spice, or curry ECT!.)
Note;
The instant coffee will not affect the taste of the meat at all, save for getting rid of that typical mutton smell!.!.!.

mutton is quite a tough meat so if it were me i would wrap it in foil and slowly roast on a no 4 gas for an
