How do you cook salmon?!


Question: How do you cook salmon!?
I am going to make dinner for my roomates tonight and I would love to make salmon but I don't now how to cook it as to keepit nice and moist!. also, does anyone have ideas for side dishes!?Www@FoodAQ@Com

oven fries (recipe included)!.

Pan-fried Salmon
Easy salmon fillets in less than 10 minutes!.

step 1 Prep pan
Preheat a non-stick pan, spray it with canola oil, and add the spices of your choice!. This layer of spice will adhere to the underside of your fish, avoiding the messy procedure of seasoning on the counter!.

I used fresh ground black pepper and some cajun seasoning!.

step 2 Prep and add fish
Rinse your salmon and pat it dry!.

Holding the fish over the sink, lightly rub it down with a thin layer of cornstarch!. Give your fish a gentle shake to remove any excess cornstarch; this is intended to be an extremely thin layer!. The cornstarch will help seal moisture into your fish, and help form a slightly crispy exterior!.

Drop it skin-side down in the pan and cook over medium-high heat!.

step 3 Spray and season
Spray the top surface of the fish with the canola oil!. This will ensure it has enough oil to prevent sticking when you flip it later, and will help spices stick to the surface!.

Add the same spices that you originally added to the pan!. I added black pepper and cajun seasoning, trying to get roughly the same ratio as I did in the pan!.

step 4 Flip
Keep an eye on the thick end of the fillet to see how far through it's cooked!. You want to flip the fish when it's slightly less than 1/3 of the way through the fish!.

After flipping, watch until it has cooked slightly less than 1/3 of the way from the other side!. The center will continue to cook after you remove the fish from the hot pan; if you wait until there's no pink left in the center the fish will overcook on the plate!. Fish are delicate!.

If you like, press the thick end up against the side of the pan to sear it before removing the fish!.

step 5 Serve
Let the fish sit off the heat for 2-5 minutes to finish cooking and redistribute juices, then plate and serve quickly!.

Serve with lemons and the side dishes of your choice!.

Cajun Seasoning
1 box salt
3 T black pepper
2 T garlic powder
1 t onion powder
1 t nutmeg
2 T parsley flakes (crunched)
4 T red pepper (ground) (cayenne)
2 T chili powder

Combine all ingredients; store in an airtight container!.

Creole Seasoning Blend
1 T salt
1 1/2 t garlic powder
1 1/2 t onion powder
1 1/2 t paprika
1 1/4 t dried thyme
1 t red pepper
3/4 t black pepper
3/4 t dried oregano
1/2 t ground bay leaves
1/4 t chili powder

Combine all ingredients; store in an airtight container!.

Use with seafood, chicken, beef, or vegetables!.
Yield: 1/4 cup!.

As an idea, in general, egg white can be used for the potatoes, so the seasonings would stick to it and makes them crispy!. I've used margarine on the cookie sheet instead of Pam spray or oil!. Or if you have a nonstick pan then don't use anything!. I like the cajun fries the best!.

Easy oven fries:
nonstick vegetable oil cooking spray (I've used margarine, if I don't have this)
4-5 large baking potatoes cut into 1/4 strips
seasoning blend, your choice

Preheat oven to 450°!.

Spray cookie sheet with nonstick spray!.

Toss potatoes with seasoning choice!. Put on a baking sheet and bake for 20 to 30 minutes, turning every 10 minutes so they brown evenly!.

Bake until browned and crispy!.

Crunchy Seasoned Oven Fries

3/4 cup cornflake crumbs

Italian Fries Seasoning
6 tablespoons grated Parmesan cheese
1 1/2 teaspoons Italian herb seasoning

Chili Fries Seasoning
1 1/2 tablespoon chili powder
1 1/2 teaspoons garlic salt

1 1/3 pounds (4 medium) potatoes, cut into 1/2-inch thick wedges
1 egg

Heat oven to 375 degrees!.

Coat two baking sheets with vegetable cooking spray!.

Lightly beat egg in shallow bowl!.

In another shallow bowl, mix crumbs and seasoning blend of your choice!.

Dip potato wedges into egg; coat completely with crumb mixture!.

Arrange in single layer on baking sheets!.

Bake 20 minutes, then turn potatoes over and continue to bake 10 to 15 minutes longer, until potatoes are browned and crisp and insides are tender when tested with toothpick or fork!.

Serve immediately, plain or with lemon or ketchup!.

Cajun Style Oven Fries
Ingredients
4 medium potatoes
1/4 teaspoon oregano
1/4 teaspoon thyme
1 teaspoon paprika
1/8 teaspoon cayenne (or to taste)
1/8 teaspoon black pepper
1/4 teaspoon sugar
1/4 teaspoon cumin
1/2 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon Tabasco sauce (or crushed chili)
1 tablespoon vegetable oil (used 1 tsp of chicken broth instead of oil)

Directions
Preheat oven to 400 degrees F!.

In a small bowl, combine oregano, thyme, paprika, cayenne, black pepper, sugar, cumin, salt, garlic powder, onion powder, Tabasco sauce, and oil; mix well into a paste!.

Line a large baking sheet with aluminum foil; pour a small amount of oil onto foil and spread with a paper towel!.

Peel potatoes and slice into french fry shapes!.

Place fries in a plastic bag with paste and work paste onto fries; alternatively you can do this in a bowl, but the bag method is easier!.

Place fries on lined baking sheet, trying not to let edges touch!.

Bake in preheated oven for approximately 30-35 minutes (your time may vary with the size fry you cut); turn once during cooking to brown underside!.Www@FoodAQ@Com

Wrapping in tinfoil and baking is an easy way to go about it!. But grilling is also a good method!. My favorite is to marinade the salmon in olive oil, lemon juice, and blackened seasonings!. Then you can just toss it onto the grill for maybe 10 min--be sure not to over cook it, just leave it on long enough so it can section apart easily & the skin will peel right off!.
As a side you can add some other veggies onto the grill (like peppers, broccoli, zucchini!.!.!.) and serve w/ rice!.Www@FoodAQ@Com

Salmon should should only be eatten in a few ways, Raw, Cured, or Smoked those are when it is at its best but if you are wanting to cook it and keep it moist i would recomend poaching it you can't go wrong!. as for sides i'm go with a little parsnip puree and some grilled veg(asperagus, squash, zuc, mushrooms)Www@FoodAQ@Com

Steam it!. Just clean the fish and pick out any remaining pin bones with some pliers!. Season with a little salt and pepper (and dill and onion powder if you like)!. Use your steamer insert (buy one of cheapy kinds if your pan doesn't have an insert; see below)!. Put some olive oil on the insert to prevent sticking!. Steam the fish for as long as it takes to flake nicely, but not too long!. Never fear, a little raw salmon won't hurt you, but overcooked fish is nasty!.

We eat asparagus as a side!. My wife loves to cook it in a pan with olive oil and garlic and/or pine nuts!. We also eat brown rice!. I found quinoa at the organic food place, that's a good substitute for rice!.

For my kids, it's salmon, green beans, and mashed potatoes (the more butter and sour cream the better)!.Www@FoodAQ@Com

Fry the salmon in some butter with some Garlic, lemon, and pepper!. Cook some rice, and Veggies as your sides, very healthy, and lite dinner!. Some wine will go perfect with it all!.Www@FoodAQ@Com

if you have salmon fillet spread a little mayo on top and sprinkle with dill and capers

or use teriyaki sauce and top with green onions
