Depends on the variety and how you intend to use them!. If you are going to serve them as a side to pork or lamb, I wouldn't and don't!.
For a dessert recipe I would and do for most ordinary apples!. I live in the Pacific Northwest and we have such a variety to chose from!. Heritage varieties don't have the thick skin that many Agro-business apples do that were developed for their shipping qualities!.!.!.those I peel!.Www@FoodAQ@Com
