Here is my recipe:
Saute a a chopped carrot, medium onion, and lots of garlic in a three tablespoons olive oil in a dutch oven until the carrot is soft (4-5 minutes)!. If you like meat, then toss in beef tips, leg of lamb cut into small pieces, or ground beef and cook until meat is no longer pink!. Drain off a good bit of the fat!. Pour in 2 cans of tomato sauce, 2 cans diced tomatoes, and one small can of tomato paste!. Cook over low heat 3-4 hours!. Stir every half hour or so!. In the last few minutes of cooking time through in whatever seasonings you like!. I am a big fan of basil!.
If you sauce is too thick, thin it with a little water!. If its not thick enough, I like to mix a little cornstarch (about a tablespoon) with a little water to make a paste and throw it in there to thicken it up!. If you find the sauce to acidic, add a few teaspoons of baking soda!. Cooking for so long will help get the chunks out, however, if it is still chunky and you are making it without meat, you can toss it in the blender (in batches), until it is smooth!. Enjoy!Www@FoodAQ@Com
