I like chunky non-traditional salsas!.
One I make the most:
-Roasted corn (sometimes you can find it frozen Trader Joes carries it, don't know where you are in the world), otherwise toss some fresh/frozen into the broiler for a few minutes)!. You need about 2 cups!.
-1-2 Avocados cut into chunks, when you mix it will fall apart a little
-1 small/medium red onion, finely chopped (adjust if you want more or less)
-1 jalapeno/serrano chili, finely chopped
-1 fresh red bell pepper, you can use fire roasted too, chopped up, about the same size as the corn
-1 can of black beans, rinsed/drained
-juice of 2 limes
-2-3 tomatoes, chopped!. Take the seeds out as you do this (too much liquid)
-1 teaspoon cumin
-Salt/pepper to taste!.
Mix everything up!. It's best if you make it at least 3 hours before you need it!. The flavors really come out!.
Sometimes the corn can be too sweet, if so, add a little extra lime!.Www@FoodAQ@Com
