After you have smashed them into a patty, then stick your finger straight through the middle of the patty, leaving a hole about 1/2 inch across!. When the patty cooks, the hamburger will expand into the hole, and the overall shrinkage will be much less!.Www@FoodAQ@Com
They shrink because they lose fat mass (which liquifies and drips out of the meat when it is cooked)!. Inevitably, they will shrink no matter what because there is no such thing as fat free beef!. To experience less shrinkage, use the lowest fat ground beef you can find (I think the lowest I've seen is 8% fat - the package would show 92/8)!.Www@FoodAQ@Com
Put a whole in the middle of each patty before you cook it!. I just push my thumb through each one!. (Kind of like a donut!.) The burger will not shrink as much!. It really works well!.Www@FoodAQ@Com
Your hamburgers are shrinking because your buying cheap hamburger, instead buy some good ground beef called chopped sirloin or ground chuck!. AprilWww@FoodAQ@Com
Make them a lot larger than you want them to be because they always shrink even on the stove or in the oven!.Www@FoodAQ@Com
