I am cooking for him Saturday night as a special treat!. I want something quick but delicious (I won't have a lot of time) but I want it to be special!. Any ideas!?Www@FoodAQ@Com

You'll need for this recipe:
Chicken breast fillets
A red and yellow pepper
An onion
Some garlic
Tomatoes
Tomato puree (optional)
Mozzerella/chedder cheese
Get some chicken breast fillets (how ever many you need)
Cut a slit through the side, nearer to the top but not all the way through!.
Cook/bake it in the oven (can't give you time, I'm not that good of a cook!)
Meanwhile, chop up some red and yellow peppers, onion and garlic!. Put them all in a sauce pan with a little bit of oil or butter and cook until they're fragrant and a little bit soft, cut up some baby plum tomatoes (or whatever kind you like the best) quite small and add them to the saucepan!.
Cook until it is a sort of mushy substance and season to your liking!. (You can add some tomato puree if you like the tomatoey flavour)!.
When the chicken is 1/2 cooked, shove the pepper, onion, garlic and tomato mixture into the slit that you cut, putting in as much as you can!.
Cook for a little while longer but when the chicken is almost completely cooked, switch to the grill and add either grated cheese (chedder, maybe) or better, a strip of mozzerella cheese over the chicken and let it melt!.
Serve with either rice, noodles or chips :)Www@FoodAQ@Com

take some boneless skinless chicken breasts and marinade them in italian dressing overnite!. Then grill them, they will come out moist and delicious! I'd also make some potatoes and maybe corn on the cob along with a special dessert!. Perfect meal for a guy!Www@FoodAQ@Com

MEDITERRANEAN SHRIMP
1 (14 ounce) can diced tomatoes (Italian herb variety)
1/2 cup chopped green onions
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound small shrimp, peeled and deveined
4 ounces feta cheese, diced
cooked orzo
Heat large nonstick skillet over medium-high heat!. Add tomatoes!. Add onions, oregano, salt and pepper!. Cook until slightly thickened, about 5 minutes!. Stir in shrimp and cook until pink, 5 to 7 minutes!. Toss with feta cheese!. Mix in cooked orzo and serve!.
Yield: 4 servings

1 1/2 pounds fresh tomatoes, coarsely chopped
1/4 cup basil pesto
6 ounces Brie
2 ounces Stilton or other blue cheese
8 ounces angel hair pasta
freshly grated Parmesan cheese
Combine tomatoes and pesto in a large microwaveable casserole dish!. Cut both cheeses into small pieces and mix in with tomato mixture!. Meanwhile cook pasta according to package directions!. Drain pasta and add to the casserole dish; mix well!. Microwave for 2 or 3 minutes, until cheese is melted!. Serve with Parmesan cheese!.
Yield: 3 - 4 main dish servings

2 teaspoons olive oil
1 1/2 pounds sea scallops
1/4 cup Italian-seasoned breadcrumbs
