Answers:
Ground Beef and Sausage in Red Beans and Rice

2 cups uncooked rice
? lbs!. polish sausage
? teaspoon cayenne pepper or Cajun Seasoning
? lbs!. ground beef
? cup chopped onion
1 cans Red Beans, drained
1 can Pork and Beans, undrained

1!. Prepare rice in large pot per directions!.

2!. Cut sausage into 1-inch chunks and then quarter the chunks!.

3!. Cook sausage in skillet until lightly browned!. Season with cayenne pepper to taste before transferring to pot with rice!.

4!. Reserve grease and brown ground beef over medium-high heat!.

5!. Reduce heat, stir in onions and sauté until onions are slightly browned!.

6!. Drain well and add to rice mixture in pot!.

7!. Stir in drained kidney beans along with pork & beans that have not been drained!.

8!. Add a little water, if necessary, and simmer until thoroughly heated!.


Bottoms-Up Pizza Bake

1 lb!. roll pork sausage*
1 small onion, diced
1 jar pizza sauce
1 small can sliced mushrooms, drained
? cup green pepper, diced
4 oz!. mozzarella cheese, shredded
? cup all-purpose flour
? tsp!. baking powder
? tsp!. salt
? tsp!. dried basil
? tsp!. garlic power
? cup milk
1 egg, beaten
Cooking spray

1!. Preheat oven to 425 degrees F!. and lightly coat a 9 X 13 inch
baking pan with cooking spray!.
2!. Add onion and crumbled meat to a large skillet!.
3!. Cook over medium/high heat for about 3 minutes or until meat
is browned and onions are tender; drain well!.
4!. Meanwhile, combine flour, baking powder, salt, garlic and basil
in a bowl; using a wire whisk to mix well!.
5!. Whisk in milk and egg until well blended; set aside
6!. Spoon drained meat mixture evenly over the bottom of prepared pan!.
7!. Sprinkle green peppers and mushrooms over top of meat layer!.
8!. Pour pizza sauce over mushroom and green peppers!.
9!. Sprinkle cheese over pizza sauce!.
Spread batter evenly over cheese!.
10!. Bake for 20 minutes or until light golden brown!.
11!. Serve hot from pan!.


*Ground beef, Italian sausage (with casing removed), or any preferred meat may be substituted if desired!.


Smoked Sausage-Potato Skillet

4 smoked sausage wieners or links
1 onion, quartered
3 medium potatoes, peeled and cubed
1 can crushed tomatoes or bits
1 to 2 cups of water
1 can butter beans, drained*


1!. Cut each sausage wiener into 4 pieces!.
2!. Brown sausage along with onions in a large skillet over medium
heat; stir often!.
3!. Add potatoes, water, and tomatoes!.
4!. Cover and cook for 15 to 20 minutes or until potatoes are tender;
stir occasionally!.
5!. Add beans, more water if needed, salt and pepper to taste!.
6!. Cover and continue to cook for an additional 5 minutes or until
the beans are thoroughly heated!.


Makes 4 servings


* Substitute lima beans or green beans for butter beans, if desired!.


Poor Man's Lasagna

2 packages macaroni & cheese dinners
8 oz package of cream cheese, softened
1 lb lean ground beef
1 medium onion, chopped
1 can (14!.5 oz) tomato sauce
1 tsp!. Italian seasoning
? tsp!. garlic powder
Cooking spray

1!. Preheat oven to 375 degrees F!. and lightly coat a 9 x 13-inch baking pan with cooking spray!.
2!. Prepare macaroni and cheese dinners as directed on package!.
3!. Meanwhile, brown meat in a large skillet over medium heat!.
4!. Add onions to meat and sauté until onions are tender but not browned; drain well!.
5!. Evenly spread prepared macaroni and cheese in the bottom of pan!.
6!. Layer cream cheese evenly on top of macaroni and cheese!.
7!. Mix tomato sauce with cooked ground beef and onions!.
8!. Layer meat mixture on top of cream cheese and sprinkle with seasoning!.
9!. Cover with aluminum foil and bake for 30 minutes!.

Chili, spaghetti sauce, curry-chicken or veggie, chicken stew & dumplings, beef stew, pulled pork sandwiches(i bought a whole pork shoulder the other day for 10$ and I could have made pulled pork sandwiches for 10 people), posole ( pork and hominy mexican soup), soups of all kinds, baked beans!.
