these are pretty good - I make them quite often for parties
mix one pkg softened cream cheese with 1/2-3/4 pkg of Fiesta Dressing Mix (Hidden Valley Ranch mix pkgs- either Fiesta or southwestern or something!.!.I forgot it's exact name!)
then mix in one can diced green chillies and one can chopped black olives (the small one)
spread onto tortillas (flavored or regular) and secure with toothpicks- then chill in fridge for at least one hour before slicing into rolls (best part is eating all the little end pieces yourself!)
then lay out on a nice serving dish and serve with salsa to dip them in!
-double or triple up on the recipe if you pan to make quite a few!

or you can make them with flavored cream cheeses and lettuce, different lunch meats, lettuce and tomatoes or cucumbers- use a toothpick with a cherry tomato, black or green olives stuck on it to secure the roll!.

Broccoli Turkey Roll-Ups

INGREDIENTS
2 (10 ounce) packages frozen broccoli spears
1/3 cup mayonnaise
1/3 cup plain yogurt
6 green onions, finely chopped
8 slices Swiss cheese
8 slices deli smoked turkey breast

Cook broccoli according to package directions; drain!. In a small bowl, combine the mayonnaise, yogurt and onions!. Place a cheese slice on each turkey slice; spread with 1 tablespoon mayonnaise mixture!. Top with broccoli spears!. Set remaining mayonnaise mixture aside!.
Roll turkey up and place seam side down in a greased microwave-safe 11-in!. x 7-in!. x 2-in!. dish!. Microwave, uncovered, on high for 1-2 minutes or until heated through!. Top with remaining mayonnaise mixture!.

Egg Roll Wrappers

INGREDIENTS
1 egg, beaten
3/4 cup cold water
1/4 teaspoon salt
7/8 cup all-purpose flour
2 tablespoons peanut oil

In a medium bowl, whisk together egg, cold water and salt!. Mix in all-purpose flour 1/3 at a time!. Allow the mixture to stand 15 minutes at room temperature!.
Heat a wok over high heat!. Remove from heat and thinly coat with 1 tablespoon peanut oil!. Reduce heat to low!. While wok is still warm, pour 1/4 of the egg mixture in an approximately 8 inch circle!. Rotate wok quickly to spread an even layer of batter!. Cook over low heat 45 seconds to 1 minute, until bottom is golden brown and edges begin to curl!. Carefully remove from heat and place on a paper towel, golden brown side down!.
Repeat the wok procedure with remaining batter, 1/4 at a time!. Rub wok with remaining tablespoon of peanut oil after the second wrapper has been made!.
Allow the wrappers to cool completely!. Cut wrappers in half to use for egg rolls!.Www@FoodAQ@Com

Pepperoni Pizza Wraps
1/2 cup pizza sauce
4 (7- or 8-inch) flour tortillas
4 ounces (1 cup) shredded mozzarella cheese
1/2 (3!.5 ounce) package pepperoni slices

Preheat oven to 350 degrees F!.

Spread pizza sauce evenly over tortillas to within 1 inch of edges!. Sprinkle each evenly with cheese!. Arrange 1/4 of pepperoni slices down center of each tortilla!. Roll up each tortilla; wrap each in foil!. Bake for 10 to 15 minutes or until thoroughly heated and cheese is melted!.





Ranch Chicken Wrap
1 large flour tortilla
2 tablespoons ranch dressing
2 thin slices white Cheddar cheese
1 handful mesclun or herb salad mix
1/2 tomato, sliced thinly
1/2 cup cooked chicken, diced

Place tortila on a flat surface!. Spread with ranch dressing!. Top middle with cheese, mexclun or salad mix, tomato and chicken!.

Roll tortilla into a log, seam down, and cut in half vertically!.

Makes 2 servings





Pile-up Taco Wrap


Did you ever think of wrapping your taco in a lettuce leaf!? Well, this recipe lets you do just that, while eliminating the carbs and calories that a flour or hard shell taco would provide!




Makes 6 servings ( 2 wraps each)
Prep Time: 15 minutes
Cook Time: 12 minutes





1 pound lean ground beef
1 package McCormick? Taco Seasoning or 30 % Less Sodium Taco Seasoning
3/4 cup water
3/4 cup reduced fat sour cream
3 tablespoons chopped fresh cilantro
12 Boston or bibb lettuce leaves
3/4 cup finely chopped tomato
3/4 cup shredded reduced fat cheddar cheese


1!. Heat a nonstick skillet over medium-high heat!. Brown beef; drain fat!. Add taco seasoning and water!. Bring to a boil; reduce heat, and simmer 5 minutes, stirring occasionally!.

2!. Meanwhile, combine sour cream and cilantro in a small bowl !.

3!. To assemble, spoon about 1/4 cup of taco meat into the center of each lettuce leaf!. Top with cilantro cream, tomatoes and cheese!. Fold leaves in half to make a wrap

1 1/2 pounds ground beef
1 package McCormick? Chili Seasoning
1 can (15 ounces) black beans
1 can (14!.5 ounces) diced tomatoes
8 (10-inch) flour tortillas, warmed
1 cup sour cream
2 cups shredded Cheddar cheese
2 cups shredded lettuce
sliced green onion, if desired


1!. Brown ground beef in a large skillet; drain fat!. Stir in seasoning mix, tomatoes and beans!. Bring to a boil, reduce heat and simmer 10 minutes!.
2!. Spread 1/2 cup chili onto center of each tortilla; top each with 2 tablespoons sour cream, 1/4 cup cheese, and 1/4 cup lettuce!. Sprinkle with sliced green onion, if desired!. Fold bottom of each tortilla over chili; fold sides over, overlapping fillings!.

Tip: Adjust the heat level to your taste by starting with McCormick? Mild or Hot Chili Seasoning








Cherry and Pork Wrap

3 cups pitted fresh sweet cherries, divided
2 tablespoons chopped fresh basil
2 tablespoons finely chopped Anaheim pepper
2 teaspoons grated fresh ginger root, divided
1/4 teaspoon salt
12 ounce lean boneless pork loin or skinned
chicken breasts, cut into 2 x 1/2 x 1/4-inch strips
1 tablespoon vegetable oil
1/2 teaspoon garlic salt
1/8 teaspoon ground pepper
2 cups cooked brown rice
8 flour tortillas
2 cups finely shredded romaine lettuce

Chop 2 cups cherries in food processor!.

Combine cherries, basil, pepper, 1 teaspoon ginger and salt!.

Saute pork or chicken and remaining 1 cup pitted cherries; fold into cooked rice!.

Wrap tortillas tightly in heavy foil; heat 10-15 minutes at 350 degrees F!.

Portion 1/4 cup each brown-rice mixture, pork, lettuce and chopped cherry mixture on one half of each tortilla!.

Fold in sides and roll into a bundle






BACON CHEESEBURGER WRAP

1 lb!. lean ground beef
4 slices OSCAR MAYER Bacon, chopped
1/2 cup chopped onions (about 1 small)
1/2 lb!. (8 oz!.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
1 pkg!. (13!.8 oz!.) refrigerated pizza crust


PREHEAT oven to 400°F!. Cook ground beef, bacon and onions in large skillet on medium-high heat until ground beef is evenly browned, stirring occasionally!. Drain; return meat mixture to skillet!. Add VELVEETA; cook until completely melted, stirring frequently!. Remove from heat; set aside!.
UNROLL pizza dough onto baking sheet sprayed with cooking spray!. Press into 15x8-inch rectangle!. Top evenly with meat mixture!. Roll up dough, starting at one of the long sides!. Rearrange, if necessary, so roll is seam-side down on baking sheet!.
BAKE 20 to 25 min!. or until golden brown!. Cut diagonally into six slices to serve!.Www@FoodAQ@Com
