Smoked sausage & bacon smothered potato's
In a 5qt!.pot fry down 1 lb!.of smoked sausage cut up into 1/2" pieces add 4 strips of bacon cut up into 1"pieces!.Cook down until brown!.Pour out and discard the drippings!.Remove and Set the sausage and bacon aside!.In the same pot (do not remove meat crumbs from the bottom of the pot)
Add 2 tbs butter or margerine with chopped onions,bell pepper and garlic!.Cook down until seasonings are soft!.
Add about 3 lbs of 2"x2" cubed potato's into pot then add the meat mixture!.blend the potato's, meat and seasonings together!.Add enough water to cover about 1/2" over the potato's!.Cook on Med/High!.At first sign of bubbles from boiling add 1pint of sour cream , 2 cups of mild shredded cheese and season to taste!.Blend in cheese and sour cream along with 1/2 cup of chopped green onion tops(optional)!.Reduce heat to med when you can easily run a fork into potato's!.When cooking is finished the mixture should be creamy thick chunks of potato's that is not too runny!.Www@FoodAQ@Com
