Question: Bread baking: two questions if I may!. what is the difference between vital wheat gluten and dough enhancer!?
Does anyone have a bread recipe that includes 1 cup of grated parmesan cheese as one of the ingredients that you can share!?Www@FoodAQ@Com

Answers:
gluten is more of what wheat flour already has!. It works well to help whoel wheat breads rise better!. Dough enhancers are sometimes chemicals and can give it that "bakery" aftertaste you sometimes notice!. I bet you can put that cheese in what ever bread recipe you are using now, with fine results!.Www@FoodAQ@Com

Vital wheat gluten helps whole grain flours get an extra ability to rise!. Dough enhancers are combination products which may have a variety of ingredients!.Www@FoodAQ@Com
