My whole family does the home cooking type of thing!. The best meal I have ever had was something my mom made: mozzarella stuffed chicken with broccoli and cheese rice casserole!. First, for the chicken, just buy regular boneless chicken breasts, slices of mozzarella, and toothpicks!. Flatten the chicken breast (don't forget to season it with salt and pepper, or whatever you prefer), either with a meat pounder or your fists (lol), and place stripped pieces of the cheese on top of the now flattened chicken breast!. Now, you are going to roll up the chicken breast and secure it like this with toothpicks (stick all the way through if possible, but make sure that you will have enough toothpick to grab it and get it out when the chicken is done)!. Make sure that there are no openings, if possible, so that the cheese won't run out when it is baked!. Bake the chicken at 375 degrees for about 35-40 minutes!. Remove the toothpicks once this is done, because the chicken will hold the rolled up shape!. Slice into medallions and serve!.

For the broccoli, rice, and cheese casserole:
Buy one box of Rice a Roni beef flavored wild rice, a bag of frozen broccoli (equivalent to about two heads of broccoli), one can cream of mushroom soup, one can of cream of chicken soup, and one (or two, depending on you) bag of shredded mixed cheese!. To prepare, cook the rice following the directions on the box!. When rice is done, you will add both cans of soup to the rice (just dump it straight out of the can, you don't need to mix them up or anything) and stir!. Once this concoction is bubbling, go ahead and add the frozen broccoli and stir!. You might want to use a lid at this point so the broccoli can get done more quickly!. Go ahead and set the oven for 375!. Once the broccoli is done, put it into a glass dish and cover top entirely with the cheese!. Bake for about 20-30 minutes, or until the cheese is melted and bubbly!.

If you decide to cook both the chicken and casserole for the same meal, you can bake them together--it will just take longer and you will need to keep an eye on it!.

Shrimp Tempura Batter

2 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt
1 1/2 cups ice cold water
1/4 cup cornstarch
1 teaspoon baking soda
2 eggs, slightly beaten
Shrimp, peeled, cleaned, patted dry

Combine flour, cornstarch, baking powder and baking soda in a bowl!. Add salt, egg and water; stir until flour is moistened!. Batter should be slightly lumpy!. Dip shrimp in batter!. Deep fry!.

Lentil Soup (Mediterranean Style)

This is a wonderful vegetarian lentil soup recipe I learned from the Palestine region!. I believe the recipe can also be traced to Lebanon!. For any one who is watching your diet or who would like to find more high protein recipes; this recipe is for you!

Ingredients
1 cup red Lentils -You should find this at any store
2 tablespoon salt
1 pinch of Safflower spice (Saffron alternative)
1/2 cup of chopped white onion
2 tablespoons olive oil
1 teaspoon of cumin
1/2 cup of very thin noodles (can omit if on protein diet)
1 lemon

In a 4qt pot, add 5 cups of water - add salt, olive oil, safflower, chopped onions and the lentils!. Set the stove to high until boil then reduce to medium!.

After 15 to 20 min or so, you should see the lentil starting to get mushy!. Once lentil is no longer hard you then add the cumin and noodles!. Continue to cook for 5 minutes until noodles are done!. Add lemon to soup for extra flavor!


Samosas (Deep-Fried Indian Pastries)

Serve these golden brown turnovers with Mango Chutney!. For an easy sauce, stir snipped cilantro or parsley into plain yogurt!.

Pastry
2 tablespoons butter or margarine
1 tablespoon shortening
2 cups all-purpose flour
1/2 teaspoon salt
1 egg yolk
1/2 cup cold water

Cut margarine and shortening into flour and salt until mixture resembles fine crumbs; stir in egg yolk!. Sprinkle in water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl!. Gather pastry into a ball; knead on lightly floured cloth-covered board until smooth, about 1 minute!.

Filling
1 pound ground lamb or beef
1 medium onion, finely chopped
1 clove garlic, finely chopped
1 teaspoon salt
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon ground ginger
1/4 teaspoon pepper
Vegetable oil
Chutney

Cook and stir lamb or beef, onion and garlic in 10-inch skillet until meat is light brown; drain!. Stir in salt, coriander, cumin, ginger and pepper!. Cool!.

Divide pastry into fourths!. Cover with damp towel to prevent drying!. Roll one fourth into 12-inch circle (dough will be springy and may be slightly difficult to roll)!. Cut into 4-inch circles; cut circles into halves!. Moisten edges with water!. Place 1 teaspoon filling on each half circle!. Fold pastry over filling to form triangle!. Press edges to seal securely!. Repeat with remaining pastry!.

Heat 1 to 1 1/2 inches of oil to 375 degrees F!. Fry about 5 pastries at a time until light brown, turning 2 or 3 times, 3 to 4 minutes; drain!. Keep warm in a 200 degrees F oven!. Serve warm with chutney!.

Makes about 60 pastries!.

Broiled Sesame Halibut Kabobs
1 pound halibut or sea bass steaks or fillets -- 1 inch thick
1 medium zucchini -- cut into 1/4-inch slices
1 medium yellow summer squash -- cut into 1/4-inch slices
1/4 teaspoon sugar
1 clove garlic -- finely chopped
2 tablespoons soy sauce
1 teaspoon grated ginger root
1 teaspoon sesame oil
1 tablespoon sesame seed

|Cut fish into 3/4- to 1-inch pieces!. Thread fish, zucchini and squash
alternately on each of eight 8-inch skewers!.* Set oven control to broil!.
Spray broiler pan rack with nonstick cooking spray!. Mix sugar, garlic, soy
sauce, ginger root and sesame oil!. Brush generously on all sides of kabobs!.
Sprinkle sesame seed over kabobs!.

Place kabobs on rack in broiler pan!. Broil with tops 4 inches from heat about 3 minutes; turn!. Broil about 2 minutes longer or until fish flakes

We had this whole seafood feast one night at a relatives house - we only started cooking at like 9pm and ate at 11!. But it was great, kingclip in a lemon garlic butter sauce and calamari that was crispy!.

Best meal Ive ever eaten was either the time my Dad had live lobster shipped to us from Maine!. I cant remember what we had with it!.!. I just remember the fresh taste of the lobster and butter!.

On a boat on the Potomac, and at a friends when we raided the fridge!. A cheese and bread picnic (with cheap red wine) on the Blue Ridge Parkway!.
