I have a son allergic to eggs (and other things) so I make a lot of things without eggs!. There are a lot of ways to substitute eggs -- everything from just ommiting and adding a table spoon of water to vinegar and baking soda (for a lot of instant leavening action) to apricot puree (for binding)!. But one of my favorite all purpose egg substitutes is Ener-G egg substititute!. You could try the following recipe where you substitute Ener-G (follow box directions) for the 1 egg!.

2/3 c!. pancake mix
1 c!. milk
1 egg
1/8 tsp!. maple flavoring or vanilla
1/3 c!. quick-cooking oatmeal
1 tbsp!. oil
1/8 tsp!. soda

Mix together pancake mix and oatmeal!. Add to other ingredients and mix!. Let stand 5 minutes!.Www@FoodAQ@Com

Ingredients
3/4 cup unbleached white flour
1/4 cup whole wheat flour
1/2 teaspoon salt
2 teaspoons baking powder
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 cup chopped walnut
1/4 cup quick-cooking oat
1 1/3 cups soymilk (plain or vanilla flavored)
1 tablespoon vegetable oil
1 teaspoon maple syrup or sugar
Directions
1!. In a large bowl, sift flours and all dry ingedients together!.
2!. In another bowl mix wet ingredients!.
3!. Make a well in the middle of the dry ingredients and pour in wet ingredients!.
4!. Stir to combine!.
5!. Oil a griddle and pour about 1/4 cup of batter for each pancake!.
