I just recently acquired a Kitchenaid stand mixer, before I had a Sunbeam.?!


Question: I just recently acquired a Kitchenaid stand mixer, before I had a Sunbeam!.!?
When I use the Kitchenaid my cakes seem to be over beaten, my frostings are gritty or too soft, something is never the same about anything I mix with the kitchenaid!. what am I doing wrong!?Www@FoodAQ@Com

When I got mine, I just had to learn how to use it--- twin rotary beaters are so much different!. ONce you get used to it, you will really like it!.Www@FoodAQ@Com

It sounds like you might be using the wrong mixer blade!. There is a great book called the Mixer Bible and it will help you make any mixer on the market sing like a pro!. I have always used Kitchenaid and never had the problems you describe so it is either the blade or uneven temperature of ingredients!. Good Luck!Www@FoodAQ@Com

I've had the same Kitchenaid stand mixer over 30 years (it's "Harvest Gold," lol)!.!.!.!. it works as well as the day I bought it! !.!.!.!. You really can't "over"beat a standard cake batter; in fact, most people never beat them long enough! They need to be beaten at least 3 min!. for air to fully incorporate into the batter, for a fluffier cake!. My frostings are never gritty either !.!.!.!.!.You need to scape down the sides of the pan when beating batter or frosting, but you need to do that with ANY mixer:) !.!.!. Your whipped frostings should whip faster and fuller, and to whatever stiffness you want the peaks! !.!.!.!. You use the "arrow" shaped blade for batters; the whisk blade for whipped products; and the hook for bread doughs!.!.!.!.!.!.Www@FoodAQ@Com

Hmmm I usually get the kitchenaid going and do other stuff, sometimes forgetting that it's mixing away! You have to incorporate most of your items as singles like first the butter, get it good and creamy, sugar, blend well, etc!. I have found some stuff will not come out so good but it was when I was trying to go too fast and the butter wasn't creamy to start with etc!.Www@FoodAQ@Com

Try a lower setting on the speed dial!! These things are much more efficient and powerful than the little cheepos!!!

But I have never had an overbeaten cake at all ever!! I have used commercial mixers all the way down to $5 special mixers that barely beat!.
