As stated it is a base for tempura and other Japanese batter, for tempura, when I worked in Japan we used club soda, salt, sesame oil, rice flour and egg whites, and it will be lumpy no matter what, they kept it cool to make it more fluffy!. I buy mine at bulk store, health food stores and here in Toronto Canada we have hundreds of Asian markets to were I can get it, it is widely used all over Asia!.

You can do rice dumplings and even fry pieces of fruit and glaze them with a sugar syrup like candy, I use 2 type plain for frying and sweet for rice porridge, sweet rice candy and coconut/sweet rice sauce on Black Thai rice pudding!. You can grind rice in the food processor but it does not work like the real thing!.Www@FoodAQ@Com

yes, rice flour when used to deep fry can have a very light texture to it!. it is good to use as a wet batter (as in tempura, umm!.!.!. like sweet and sour chicken at a chinese rest!.) to me it has a very mild almost sweet taste!.Www@FoodAQ@Com

YES, rice flour makes a wonderful crispy batter for fried foods, esp!. light seafoods and veggies!.

I'm not sure if you can grind yoru own from raw rice or not!.!.!. I usually just buy it ground!.Www@FoodAQ@Com

U can deep fry with rice flour, at least try, if u don't like it, switch to some other type of flour, at least u tried and know the results!.
To grind ur own flour , u need a grinding stone, after a pound of rice, the grinding stone will retire in ur garden as an ornament, rather buy rice flour, its plentiful and not expensive!.Www@FoodAQ@Com
