Southern Fried Cat Fish
INGREDIENTS
1/2 cup buttermilk
1/2 cup water
salt and pepper, to taste
1 pound catfish fillets, cut in strips
1 1/2 cups fine cornmeal
1/2 cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay?
1 quart vegetable oil for deep frying
DIRECTIONS
In a small bowl, mix buttermilk, water, salt, and pepper!. Pour mixture into a flat pan large enough to hold the fillets!. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate!.
In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning!. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly!.
Heat oil in deep fryer to 365 degrees F (185 degrees C)!.

simple!. this is how i do my fried catfish!. all i do is rinse the catfish, season it with lemon pepper, seasoned salt, and garlic powder!. i then roll the fish in my favorite store-bought fish fry batter (i like andy's, zatarains, and old bay has one too)!. i pour in some cooking oil half full in a pot/deep skillet and i heat the oil HOT on medium high heat!. once the oil is hot, i add in the fish!. i let it brown on both sides and once it's done, i drain the fish on paper towels!.Www@FoodAQ@Com

Mix dry ingredients, then water, then vinegar and last the beaten
egg to make a smooth batter!.
Dip the fish into a little extra flour then into the batter!. Then
