Help with a dinner dish?!
My mom used to make these fantastic garlic mashed potatoes with cream cheese!. Now I remember how to make them so it isn't a problem!.
However, I do have another little issue!. I have no idea what meat would work with them!. BBQ chicken!? Steak!? Meatloaf!?
I need something fairly easy since I'm nowhere near a professional cook!. Baked or fried is easiest for me!.
I'd ask my mom but she died in 2003 and my sister is away camping!.
I've been bragging up mom's recipe to my husbands family so now I want to show them!.

This should go very well with your mashed potatos!.
BBQ Chicken
3 pounds chicken leg quarters
2 1/2 cups barbecue sauce (recommended: Butch's Smack Your Lips Mild BBQ Sauce)
1/4 cup seasoning rub (recommended: Butch's Smack Your Lips Magic Dust)
1/4 cup apple cider vinegar
Put the chicken in a non-reactive bowl!. Combine 2 cups barbecue sauce, the seasoning rub, and vinegar and pour it over the chicken!. Cover and marinate the chicken in the refrigerator at least 4 hours, preferably overnight!.
Preheat the oven or smoker to 225 degrees F!.
Remove the chicken and shake off the excess marinade!. If cooking in an oven, place on a rack over a pan to catch drippings!. If cooking in a smoker, place directly on a rack!. Use your favorite wood, I use New Jersey hickory!. Cook until the internal temperature, using an instant-read thermometer, registers 165 degrees F, about 1 1/2 to 2 hours!.
Remove the chicken from the rack and place it in a foil pan!. Brush with the reserved 1/2 cup barbecue sauce, cover with foil, and place back in the oven or smoker for 1/2 hour!. Remove the chicken from the pan and finish off on a grill!. Using medium to hot flame, grill until the outer skin is crisp and marked (a few minutes should do it)!. Serve immediately!. You may also place chicken in a clean foil pan and cover with foil to keep warm until serving!.
**Before adding your wood, make sure the cooking temperature has been achieved!. Add meat, then wood!. This will prevent the meat from looking too dark!.
**For a sweeter taste, add 1/4 cup apple juice to your marinade!. Adding apple juice to the barbecue sauce while grilling will give it a nice glaze, too!.Www@FoodAQ@Com

Bring the piece of Corned Beef/Silverside to the boil, then reduce heat to a gentle simmer and cook for 30 minutes per 500g (lb)!.
When cooked rest for 15-20 minutes before carving!.
Serve with garlic mashed potatoes, carrots and cauliflower, hot English mustard, or a warm sweet mustard sauce!.Www@FoodAQ@Com

all you do is rub the chicken down with olive oil and season the chicken with seasoned salt, lemon pepper, and paprika overnight!. then when you're ready to bake it, put some sliced lemons in the cavity of the chicken and i did this once, i put a few garlic cloves under the skin of the chicken!.!.!.!.!.!.came out nicely!. i baked the chicken uncovered for an hour and 30 minutes in a 325 degree oven!. this chicken was soooo good!. it had the house smelling lovely too!. try it!. enjoy!.

I love garlic mashed potatoes with cream cheees!. I actually suggested them to someone else on here!. And, in my personal opinion, steak taste the best with them! I usually do 8 oz!. top sirloin steaks with the mashed potatoes and then some sort of veggie, usually corn or broccoli!. Enjoy! Almost any meat will go with garlic mashed!. Pork chops, meatloaf, chicken, ribs, steak!. I would just stay away from sandwich meats like hamburgers, or hot dogs, pulled pork BBQ, etc!.

Mashed taters are good w/ meatloaf, salisbury steak, swiss steak, roast chicken or turkey!.!.!. something w/ some good gravy to put in the middle of the mashed taters!Www@FoodAQ@Com
