Question: Why does mayo have 0g of protein if the 3rd ingredient is usually eggs!?

Ingredients are listed in the order of prevalence!. The main ingredient of mayo is oil!. Like 80%!. Then a wee amount of vinegar, then an even smaller amount of egg!. PER PORTION, there isn't enough protein to worry about!. A 32 oz!. jar of mayo probably has about 5/6 of an egg in it all together, or around 5-6 grams of protein for the ENTIRE JAR!.Www@FoodAQ@Com

A significant amount of the protein in eggs comes from albumin (the white part; it is a large protein found normally in our bloodstreams)!.

There are a couple of reasons why mayo may not have much protein!. First, if mostly egg yolks are used, then protein is relatively limited!. Secondly, though eggs are the third ingredient in mayo, this doesn't mean they're actually present in large concentrations - most mayo is comprised primarily of oil!.Www@FoodAQ@Com

Mayo is made with egg yolks, not whites!. Whites have most of the protein!. also, compared to the amount of oil, there is only a tiny bit of egg in that 1 tablespoon serving!. It wouldn't add up to a full 1 g of protein, so it would be listed as 0!.Www@FoodAQ@Com

Commercial mayo has processed egg!. There is no nutritional value left, but they made it safe!.

If I am eating at home, I make my own!. For a picnic or sandwiches to take elsewhere, I use a commercial product because it is safer!.Www@FoodAQ@Com

0 grams is a statistical measure!. There is so little protein in it that it is technically known as "none!."

I suppose if you ate a whole jar of mayo you'd get a trace of protein!.
