Assortment of Deviled Eggs



Ingredients

6 eggs
1-2 T mayonnaise
1/2 t yellow or Dijon mustard
paprika

Variations:

Horseradish stuffed eggs
Add 1/2 t horseradish or creamed horseradish to standard deviled egg recipe!. 1/2 t white wine vinegar may be added as well!.

Ham and pickle stuffed eggs
Mash the egg yolks with 4 t finely chopped deli ham, 1 t finely chopped small dill pickles or cornichon and enough mayonnaise to form a smooth consistency!. Sprinkle with paprika!.

Seafood deviled eggs
Add 4 T finely chopped cooked shrimp or crab meat to the standard deviled egg recipe!.

Caviar stuffed eggs:
Mash the egg yolks and combine them with 1 T soft butter, 1/2 t each of Worcestershire sauce, salt, grated onion and finely chopped chives, and 1/4 t each of white pepper and dry mustard!. Fill the eggs with this mixture and top with caviar!.

Cumin and chive stuffed eggs
Add 2 T finely chopped fresh chives, a squeeze of fresh lemon juice, 1/2 t cumin and salt and pepper to taste to the standard deviled egg recipe!.

Directions
Cover eggs with cold water by one inch in a saucepan and bring just to boil!.

Reduce heat and simmer eggs for 20 minutes, turning eggs often during cooking to set yolks at dead center!. Peel eggs, then halve lengthwise!.

Carefully remove yolks and mash in a bowl with a fork

!. Stir in 1-2 T of mayonnaise (depending on desired consistency) and mustard!.

Using a teaspoon or pastry bag filled with egg yolk mixture, stuff the egg white with the yolk mixture!.

Sprinkle with paprika

!. Refrigerate until serving!.

Yield: 12 deviled eggs!.





BETTY CROCKER'S DEVILED EGGS


6 hard cooked eggs
1/4 tsp salt
1/2 tsp dry mustard
1/4 tsp pepper
3 tablespoons salad dressing or mayonnaise

Cut peeled eggs lengthwise in half!. Slip out yolks; mash with fork!. Mix in seasonings and salad dressing!. Fill whites with egg yolk mixture, heaping it up lightly!.Www@FoodAQ@Com

I guess the recipe you're using calls for vinegar in the egg yolks mixture!? I've never used vinegar in a deviled egg recipe!. I don't use an actual recipe though!. You could use anything like lemon juice, lime juice, or a bit of pickle juice!. But this is all so minimal since you don't want your egg yolks runny, you want to be able to spoon or pipe them into the egg white halves!.
Perhaps you could post this recipe!? I'm curious to see what else is in it!.Www@FoodAQ@Com

There is vinegar in the prepared mustard if you use it!. I always put in my Deviled Eggs the following:

mayonnaise
prepared mustard - just a little
fresh ground black pepper
curry

The curry really gives it a nice flavor!. My step-daughter puts minced garlic in her deviled egg mixture and they are good too!.

I went once to a 50th Wedding Anniversary and they served, on a round slice of bread, the deviled egg mix - topped with a very thin slice of Lox!. It was to die for!! They were open-faced!.Www@FoodAQ@Com

Contrary to several of the previous answers there are several deviled egg receipes which call for vinagar!. You may substitute any acidic product!. My personal preference is lime juice!. My grandmothers receipe book has a deviled egg receipe that calls for apple cider vinegar, sweet cream & pepper!. I've never tried it but that old lady was a great cook, (she cooked for threshing crews in the old days) so I willing to bet its good!.Www@FoodAQ@Com

substitutes for vinegar are lemon or lime juice, pickle juices, anything with a soury bite to it!.

teaspoon each of mayo and mustard, a bit of salt or celery salt, is all I use in mine, that is per egg!.

One time I had some really ripe avocados and used one per 6 egg yolks with the mayo and a bit of lime juice!! Wow were they good!.Www@FoodAQ@Com

Yes!.!.!.!.!.!. the old-fashioned southern traditional deviled eggs had vinegar!.!.!.!. somehow we got away from it and started using mayo and a lot of other ingredients
