Question: Why do recipes say you have to wait after baking a pie or cake!?
I hate waiting and I like it warm so why do I have to wait!?!?!?Www@FoodAQ@Com

If you cut into a warm pie, before it has time to "set", the juices will run all over and the pie slice won't retain it's shape!. If you cut into a warm cake (or take it out of the pan right from the oven), the cake can crumble and also won't retain it's shape !.!.!.!.!.!.lasagna is another thing that should "set" before you cut it; and meat needs to "set" too, or the juices will run out when you cut it!.!.!.!.!.!.Www@FoodAQ@Com

Allowing the item to cool a bit before digging in helps it "set up!." Compounds are heated to break them apart!. When they cool, they can form all kinds of new bonds (in this case, with mus less water!.) Allowing them to cool some allows the bonds to form!.

You can eat it warm, but the less you wait to more likely your pie will be runny!.Www@FoodAQ@Com
