A little more info' would have been nice, but this one goes with loads of main courses!. It's also cheap, easy and can also be made in advance and kept in the fridge!.
MOZZARELLA SALAD
Serves 2
INGREDIENTS
100g packet of Mozzarella cheese
1 large beef tomato
1 small bunch of fresh basil
1 large onion
2 tablespoons of olive oil*
Ground pepper to taste
METHOD
Open the pack of cheese and drain off the liquid!. Wash the tomato!. Wash and chop the basil!.
Cut the cheese into an equal number of slices!. Cut off the top and bottom off of the tomato, and then cut it into an equal number of slices!. Peel the onion, cut off the top and bottom, and then cut it into an equal number of slices!.
Arrange the cheese, tomato and onion on two small plates, overlapping the slices!. Sprinkle on the chopped basil!. Dribble on the olive oil!. Season with the pepper!.
ADDITIONS & ALTERNATIVES
Add some stoned olives!. Omit the onion!. Serve with ciabatta or focaccia bread!.

Something easy that only takes a little while to prepare or just needs heating up!. Soup is good in colder months or gaspacho soup in summer and can just be served without anything being done!. Pate and toast is easy to do as well!. Prawn cocktails can be made in advance and kept in the fridge!. Blinis with taramasalata and hummus make good finger food starters!. Cold cooked quails eggs for guests to peel themselves and dip into celery salt is quite nice too or some cold prawns with the shell on and some lemon mayonnaise and a finger bowl and bowl for the shells!. Another good one is a small salad!. Rocket, balsamic vinegar and parmesan cheese with some olives and sundried tomatoes makes a lovely tasting Italian salad!. Marinate some fresh and snapped asparagus in some olive oil, seasoned with salt and pepper and balsamic vinegar, for just a few minutes!.
Wrap the spears in prociutto and bake at 350 for about 15 minutes!. Let sit for just a minute to harden off and then serve with a lemon/mustard/honey sauce!.Www@FoodAQ@Com

I like a half avocado scooped out and diced small with prawns mixed in and a Marie rose sauce poured over then a sprinkling of cayenne pepper over the top!. can incorporate lettuce or tomatoes in with it too!.Www@FoodAQ@Com
