Welsh Rabbit Stew Recipe
Ingredients for Rabbit Stew

How to make Rabbit Stew
1!. Have the rabbit cut up into portions for you by the butcher if you are not handy with doing it yourself
2!. Prepare a casserole dish by spreading the onion; finely sliced on the bottom and crushing the rosemary sprig in your hand to release the aroma and lay on top of the onion
3!. Peel and roughly chop the vegetables
4!. Season the flour with a little salt and freshly ground pepper and toss the rabbit pieces it in to lightly coat (keep the flour for later)
5!. Heat a little oil in a heavy frying pan and lightly brown the rabbit all over and place the pieces into a casserole dish
6!. Add the stock into the frying pan to lift all the sediment off the base and allow to simmer for 5 minutes!. Strain over the rabbit
7!. Cover tightly and place in the oven at 180oC for 2 - 3 hours until the rabbit is starting to get tender
8!. Remove from the oven, pick out any fine bones and add the vegetables!. Cook for a further 40 minutes, topping up with more stock if required
9!. Remove from the oven and place the rabbit onto a tray
10!. Mix the flour with a little cold water to form a slurry, stir into the stew and cook on top of the stew while stirring until slightly thickened
11!. Add the rabbit back in and re-heat
12!. Serve with mountains (well it is a Welsh recipe) of creamy mashed potatoes

While not traditionally Welsh; a garlic clove or two may be added at stage six if you wish!.

1 1/2 cups all-purpose flour
1/4 cup grapeseed oil
3 tablespoons butter
1 cup celery, diced
2 cups diced carrots
2 onions, finely diced
Salt and freshly ground black pepper
3 bay leaves
6 cups water
4 cups red wine
4 medium-sized potatoes, diced
1/2 cup sliced sauteed mushrooms
Using half the flour (3/4 cup) coat the pieces of rabbit, shaking off any excess!. Heat the oil and butter in a large heavy-bottomed saucepan, and brown the floured rabbit on all sides!. Add the celery, carrots, onions, salt, pepper, bay leaves, 6 cups water and red wine, and stew for about 2 hours!. Add the potatoes 45 minutes into the stewing process!. Once the rabbit and all the vegetables are cooked, use some water to form a paste with the remaining 3/4 cup flour!. Stir the flour mixture into the pot as a thickener!. 3 garlic cloves
1 onion
8 ounces bacon, in one piece
Bouquet garnish:
10 sprigs parsley
10 sprigs thyme
1 bay leaf
3 tablespoons olive oil
1 cup red wine
1 cup small onion
1 tablespoon sugar
1 tablespoon butter
12 new potatoes
Fresh herb (chervil)
1 teaspoon salt
1 teaspoon pepper
Directions
1!.Chop rabbit into 12 pieces, discard the head and feet!.
2!.Chop the onion and garlic finely!.
3!.Slice and dice the bacon!.
4!.Make a bouquet garnish by tying together the parsley, thyme and bay leaf with string!.
5!.Sear the rabbit pieces in olive oil, until lightly browned, remove from casserole!.
6!.In the same pan, fry garlic, onion and the bouquet garni!.
7!.Add the bacon and allow to color lightly!.
8!.Pour off excess fat!.
9!.Return rabbit to pan and deglaze with the red wine!.
10!.Add 3 cups water, cover and cook for 1 hour 45 minutes!.
11!.Peel small onions and remove root ends!.
12!.Rinse well!.
13!.Cook the onions in water to cover, add sugar, butter, salt and pepper!.

I've made an excellent goose stew with this recipe, it should work!.
cut meat into pieces, cut up onion, put into slow cooker with two cans beef broth, mix some flour into some tomato sauce and put in pot, put in other veggies whatever you have, bay leaf, pepper
