Meat Filled Empanadas

Filling:
2 tablespoons olive oil
2 large Spanish onions, minced
2 pounds ground beef
4 cloves garlic, crushed
Salt and freshly ground black pepper
2 red bell peppers, roasted, peeled, seeded and chopped
1 cup canned, peeled tomatoes
1/2 cup green cocktail olives (pimento filled), whole
1/4 cup black currants

Empanada Dough:
2 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon sugar
5 tablespoons vegetable shortening
1 egg, beaten
1/3 cup dry white wine


Empanada Dough: Combine flour, salt, and sugar in a food processor!. Cut in shortening, mixture should be sandy!. Add the egg and wine, pulse until dough comes together in a ball!. The dough should be pliable; if not add more wine!.
Assembly: Separate the dough into 3 balls!. Roll the first ball out until it is 1/4 inch thick!. With a 6-inch round cutter, cut circles out of all the dough!. Remove the edges and save for the next roll!. Fill each circle with about 2 1/2 tablespoons in the center of the dough!.

Dip a small brush in room temperature water, run the brush around the edge of the dough!. Close 1 side to the other forming a half moon shape!. Close the edges pressing lightly with the back of a fork!.

In a deep saute pan, heat 4 to 5 inches of canola oil on medium high heat to 360 degrees F!. Add the empanadas turn over constantly until golden!. Remove and drain on paper towels!. Serve immediately!.Www@FoodAQ@Com

-fry or bake as many chicken pieces as you want!.
-in a separate bowl combine hot sauce, lemon juice and either margarine or maple syrup to taste!. (should only be a tablespoon or so of the margarine or syrup!.)
-toss the chicken in sauce creation and serve!

A couple of really quick things that always seem to please my crowd and people ask me about them all the time and they are SUPER easy and quick and be fully prepped the night before!.

Rotel Cheese dip and Chips!. Throw a large brick of velveeta cheese cut into cubes into a crock pot with 1 can of rotel brand diced tomatoes with chilis and 1 pound of browned and drained ground sausage regular flavor,!.!.!.!.!. people absolutely LOVE it!. Just turn the crock pot on low about 1 or 2 hours before party and stir it frequently!.

The other is even more simple and tastes amazing as long as you make sure to use fresh ingredients!. Largely chopped mushrooms, Tomato, basil, pepperoni slices and marinated them in a small amount of Italian dressing in the fridge over night!. Serve with European crusty bread from the bread department at any grocer,!.!. they'll slice it for you!. Just toast it by brushing both sides of each slice with a little olive oil and toss it in the oven on a cookie sheet for a could of minutes till crispy!.Www@FoodAQ@Com

Try these: One loaf of party rye bread (small loaf of light rye bread near the deli), one pound of shredded sharp cheddar, one jar of Hormel bacon bits (near the salad dressings, usually), approx!. one cup of mayonaise and 2 or 3 heaping tablespoons of horseradish!. Mix the cheese, all the bacon bits, mayo and horseradish!. Spread the mixture on the slices of party rye!. Toast under a broiler 'til the cheese melts and just starts to brown!. Serve hot!. as a main (or pasta course) try this

a slab of bacon
a pint of mushrooms
3 celery stalks
half an onion (good size)
2 red bell peppers (diced)
salt / pepper to taste
2 teaspoons olive oil
3 - 4 teaspoons of flour
1 cup chicken broth
1 cup milk (heavier the better)
maybe a teaspoon of each
basil
cilantro
parsley

boil a linguini, start the (after cubing it) bacon in a pan that is non stick after it is all cooked add the veggies to the pan with the bacon grease (you should avoid scorching the bacon drippings) remove veggies add oil and flour to make a roux then after reaching a medium blonde color add broth and milk make the sauce thick with constant stirring and add the veggies and bacon let simmer shortly and toss with pasta and add herbage!.

I am having a graduation party in a couple of weeks!. The main thing I am going to make is a big submarine/hoagie sandwich!. I am going to buy the longest bread, like French and put meat, cheese, and lettuce on it and then cut it into 1 or 2 inch slices!. I peronally make homemade chili con queso dip and jalapeno popers, they're really good, and you can find the recipies there on foodnetwork!. buffalo wings arent bad either, just get a pot and alot of vegetable oil and cook em up, then toss them in your favorite buffalo or hot sauce and serve!. stuffed mushrooms are really good to, i usually use small portabella mushrooms and stuff em with spicy sausage!.Www@FoodAQ@Com

I'll share this recipe that has made me famous!
1 bag oyster crackers
3/4 cup vegetable oil
1 envelope dry ranch dressing
1 t garlic powder
1 t lemon pepper
1 t dill weed
Mix all ingredients (except crackers)!. Pour mixture over crackers and stir gently till crackers are coated with mixture!. Place in low oven (250 degrees) for 20 minutes, stirring occasionally!.
