The rub I use for my chops and steaks consists of:

1 T kosher salt
1 tsp fresh ground pepper
1 tsp celery salt
1 tsp onion powder
1 Tsp chopped rosemary
1 Tsp chopped oregano
1 Tsp chopped fresh thyme
1 Tsp chopped basil
3 T worcestershire sauce
1 Tsp garlic powder or 2 cloves garlic, minced

Marinate several hours before you grill!. You can baste with a mixture of olive oil, red wine, soy sauce, brown sugar, and chopped garlic!.Www@FoodAQ@Com

You can buy a marinade from the store and follow the directions but remember that over marination makes meat tough!. You can make your own with olive oil, salt, pepper, minced garlic and balsamic vinegar!. I only marinate for 30 minutes!. You can also add fresh herbs as well!. The main thing is do not over cook!! Allow 10 minutes after you take your steaks off the grill to let the juices be "re-absorbed" back into the meat before you serve!. Just cover with foil to keep warm!. The thickness of your steaks will determine how long you leave them on!.Www@FoodAQ@Com

Steak -
Ribeye/T-Bone seasoning - Seasalt, and roasted garlic(garlic powder is also good if roasted garlic isn't available!.
I think the montreal steak seasoning is overrated!. If you're not a fan of onions and peppers, onion powder works great!.

Skirt steak(mainly used for fajita's) - I recommend the Fabulosa Quick Fajita Marinade, and a light amount of montreal steak seasoning!.

Pork chops- McCormick's Grillmates Pork Rub!.

Sauce - Sweet Baby Ray's!. It doesn't get better!.

If you are not a great cook you can make fabulous steak with a prepackaged grill marinade- try A1 Steakhouse marinade and put your steaks in a big zip lock, add enough marinade to coat, and soak for 4-12 hours!. ( I add a shot of southern comfort or jack daniels to mine!.!.!.)

For Pork chops, you can use the A1, but use half A1 and half apple juice, in a zip lock and for 4-12 hours,

Grill until done!.Www@FoodAQ@Com

All the answers so far have been great!. If you're having a big cook out you can provide all the "fixin's" and let your guests decide how to "prepare" their steak or chop for the grill!. I personally like to marinate, there are several prepared marinades out there!. Rubs are good as well, a mix of spices that you rub on the steak dry prior to grilling!. Get a variety and allow your guests to pick and choose!.Www@FoodAQ@Com

I don't like steaks with a lot of stuff on them - chops can be seasoned more if you want!.
For steaks I put garlic powder and some salt and pepper!. Unless it's a really cheap steak, I don't care too much for marinades!.
Chops are ok though - a simple marinade or Worcestershire sauce, white wine and some garlic and pepper with a little olive oil!. Bake!. grill or fry!.Www@FoodAQ@Com

Turn your grill up to HIGH, let it get screaming hot, then slap your meat down!. Leaveit alone for 3-5 min per side!.!.!. it will release itself when it's ready to turn!. Use a spatula or tongs, not a fork!.

Can cook beef steak to med-rare!.!.!. pork chops need to be cooked all the way through, to an internal temp of 165oF!.Www@FoodAQ@Com

I season mine with garlic powder, sea salt, fresh crack black pepper, and seasoned salt!.
That is what I season both steaks and pork chops!.
Every once in a while I will marinate my steaks in The Italian Salad DressingWww@FoodAQ@Com

I sometimes get Montreal Steak sesoning for steaks on the grill !. I like them with that or actually I likethem best just with salt!. After they're grilled then have as an option other stuff like A-1 or horseradish sauce!.Www@FoodAQ@Com
