This is a recipe that I have used several times with success!. These cookies taste just as yummy as the expensive 8 cookies to a packet you buy at the supermarket but a lot cheaper to make!.
Fudgy Chocolate-Chip Cookies
125g butter, softened
1/2 cup loosely packed brown sugar
1/4 cup white sugar
1 egg
1 teaspoon vanilla essence
1 1/4 cups plain flour
1/2 teaspoon bicarbonate of soda
1/4 teaspoon salt
1 cup chocolate chips
1/4 cup roughly chopped pecan nuts (optional)
STEP 1: In a large bowl, using an electric mixer, cream together the butter and both sugars until light and smooth!. Add the egg and vanilla and continue to beat until smooth!. In a bowl, sift together the flour, bicarbonate of soda and salt!. Add the flour mixture to the creamed ingredients and lightly beat until just blended!. Fold in chocolate chips and pecans!.
STEP 2: Drop large tablespoons of dough onto lightly greased baking trays, spacing about 5cm apart!. Bake in a preheated moderate oven 180C for 9-12 minutes, or until golden around the edges (they will not be set at this stage)!. Cool for 5 minutes, then transfer the now setting cookies to a wire rack!. Store in an airtight container!. Makes about 18 biscuits!.Www@FoodAQ@Com

* 6 tablespoons of light brown sugar
* 6 tablespoons of white sugar
* 1 teaspoon of vanilla
* 1 large egg
* 6 ounces of chocolate chips - semi-sweet
* 1/2 cup of nuts - optional
Steps:
In a medium bowl, whisk together flour, baking soda and salt!. Set aside!.
In a small bowl large egg with vanilla and set aside!.
In a large bowl, blend together softened butter, white sugar and brown sugar until creamy!. Mix in the egg and vanilla and blend well!. Gradually add the flour mixture and mix well!. Stir in chocolate chips (and nuts)!.
Wrap dough in plastic wrap and refrigerate until firm, at least 1 hour!.
Cut the cookie dough into 12 even cubes!.
Roll each cube into a ball and place on a 14 by 15 inch cookie sheet!.
Bake in a preheated 325 degree oven for 17-19 minutes or until golden!.
Let the cookies rest 2-3 minutes before removing from the tray onto a cooling rack!.
Makes 12 cookies!.
