Servings: Serves 4!.
Ingredients1/2 pound radishes, trimmed and grated coarse (about 2 cups)
3 cups finely shredded cabbage
1 cup coarsely grated carrots
1/2 cup thinly sliced red onion
2 tablespoons fresh lemon juice
1/2 teaspoon sugar
2 tablespoons olive oil
2 tablespoons finely chopped fresh coriander, mint, or parsley leaves PreparationIn a bowl toss together the radishes, the cabbage, the carrots, the onion, the lemon juice, the sugar, the oil, the coriander, and salt and pepper to taste!.
Radish Hot & Sour Soup
5 cups chicken stock
1/4 cup rice vinegar
2 T sugar
1/4 tsp!. cayenne pepper
1/4 tsp!. ground (dried) ginger
1 pound raw shrimp, peeled and deveined
6 oz!. sliced radishes, about 1 1/2 cups
1 1/2 cups spinach leaves, shredded
2/3 cups thinly sliced green onions
Serves 4-6
In a large saucepan over medium heat, bring stock to a boil!. Stir in vinegar, sugar, cayenne and ginger!. Add shrimp and cook until shrimp turn pink and curl, about 3-4 minutes!. Turn off heat, stir in radishes, spinach and green onions!. Cover and let stand 2-3 minutes before serving!.
Crispy Oriental Radishes
This recipe comes to us from the Radish Council!. Serve these as you would pickles or relishes or as a quick and healthy snack!. You can even toss them into a salad!.

Radishes are fab! You can chop them up tiny and add them to hummus - yum!. Or to boiled baby potatoes with a little olive oil!. Or put bigger pieces in a ncie sandwich with thick wedges of cheese!. Damn I'm hungry now :)Www@FoodAQ@Com
