Take one slice of bread, cut a hole in the middle (let your kids eat the centers) and lay on greased frying pan on medium heat!. Crack an egg and drop the contents into the hole in the center of the bread!. Sprinkle with grated cheddar cheese!. Fry it until cooked, rotating sides at even intervals!. Season to choice, and serve immediately!.





Great Grandma's Scalloped Eggs~~

8 hard boiled eggs, peeled and sliced
3/4 cup milk, or half & half or cream
3/4 cup seasoned bread crumbs
2 TB butter
Salt and pepper to taste
4 slices crumbled cooked bacon -- optional

Preheat oven to 350° F!.

Grease an 8" square glass baking dish and cover bottom with a layer of
crumbs!.

Place a layer of sliced hard boiled eggs, then sprinkle with crumbled
bacon if using, dot with a few bits of butter, then repeat this layer
process, finishing with a layer of buttered crumbs!.

Pour cream, milk or half and half over the whole dish until it comes
about halfway up the side of the dish!. Place, uncovered, in the oven
until heated and browned, about 4-6 minutes!. Serve over buttered
toast or biscuits!.

Yield: 4 to 8 servings






Garden Vegetable Scramble

Makes 4 servings!.

2 tsp canola or olive oil

1/4 cup onion, diced small

1/4 cup tomato, diced small

1/4 cup mushroom, diced small

1/4 cup red pepper, diced small

1/4 cup green pepper, diced small

1/2 cup fresh spinach, cut into strips 1/4-inch wide by 1-inch long

1 tsp white pepper

1/2 tsp salt (optional)

1 cup egg substitute

Heat an 8- or 10-inch nonstick fry pan on medium heat; add the oil and
all the vegetables and sauté for 5 to 7 minutes, or until the
vegetables are tender!. Sprinkle with salt and pepper!.

Turn the heat to medium-high and pour in the egg substitute!. Keep
stirring until the eggs are well scrambled!. Arrange the eggs on 4
serving plates with toast and a dish of fresh fruit!. Makes 4 Servings!.





GARDEN FRESH FRITTATA
Yield: 6 Servings

4 lg Eggs
4 c Zucchini; shredded
2 c Carrots; peeled, shredded
1/2 c Flour
3/4 c Mayonnaise
1 c Monterey Jack cheese
-shredded
1/2 c Parmesan cheese; grated
1/4 c Onion; chopped
1 tb Fresh basil chopped, OR
-1 tsp dried
Pepper; freshly ground

Preheat oven to 375~!. Beat eggs!. Mix together the remaining
ingredients and add to eggs!. Pour into buttered quiche pan and bake
30 to 35 mins!. or until set!. Serves 6 to 8!.





Cream Cheese Scrambled Eggs
12 eggs
1 cup light cream or half-and-half
6 ounces cream cheese, cubed
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup plus 2 tablespoons butter or margarine

Combine first 5 ingredients in container of electric blender; cover and blend at medium speed until frothy (about 10 seconds)!.

Melt butter in a large heavy skillet over medium heat; add egg mixture!. Cook over low heat until eggs are partially set, lifting edges gently to allow uncooked eggs to flow underneath!. Cook until eggs are set but still moist (9 to 12 minutes)!.

Yields 8 servings!.

INGREDIENTS:
1 pound Bob Evans? Original
Recipe Sausage Roll
2 cups Bob Evans? Diced
Seasoned Home Fries 1/3 cup chopped green pepper
8 eggs
1/2 cup milk

DIRECTIONS:
1!. In large skillet over medium heat, crumble and cook sausage, potatoes and green peppers until sausage and potatoes are brown!.
2!. In small bowl, combine eggs and milk until well mixed!. Pour over sausage and potato mixture, stirring gently until eggs are cooked

Egg Drop Soup

6 cups chicken stock
1/2 cup thinly sliced green onions
1/4 cup chiffonade spinach leaves
4 shiitake mushrooms, stems removed, wiped clean, and thinly sliced
1 teaspoon soy sauce
Pinch finely ground white pepper
2 large eggs, lightly beaten

In a medium saucepan, bring the stock to a simmer!. Add 6 tablespoons of the green onions, the spinach, mushrooms, soy and white pepper!. Return to a bare simmer and cook for 3 minutes!. Stirring with a fork or chopstick, gradually add the eggs in a slow steady stream!. Cook until the eggs are set, stirring to create shreds or ribbons of the eggs, 1 minute!.
Remove from the heat!. Ladle into bowls, garnish with the remaining 2 tablespoons of green onions, and serve immediately!.

Try Quiche - you can add some many things to a quiche to make them different each time!. I like to make my quiches with a combination of sliced mushrooms, shredded cheeses, crumbled bacon, crumble sausage or diced ham and chopped spinach and/or broccoli!.

Here is a basic Quiche recipe and you can add whatever you want to it to fit your tastes and likes:

Quiche

Ingredients
1 recipe Pastry for Single-Crust Pie or 1/2 of a 15-ounce package rolled refrigerated unbaked pie crust (1 pie crust)
4 eggs, lightly beaten
1-1/2 cups half-and-half, light cream or milk
1/4 cup sliced green onions or diced sweet or red onion
1/4 teaspoon salt
1/8 teaspoon black pepper
Dash ground nutmeg
3/4 cup chopped cooked ham, chicken, turkey or crabmeat (about 3 1/2 ounces) or whatever meat you like, you can also leave the meat out if you want
1-1/2 cups shredded Swiss, cheddar, Monterey Jack, and/or Havarti cheese (6 ounces) - I have also used Mozzarella, Italian Blend, Mexican Blend or Provolone Cheeses with great results
1 tablespoon all-purpose flour

Directions:
Prepare and roll out Pastry for Single-Crust Pie or unroll refrigerated pie crust according to package directions!. Line a 9-inch pie plate with pastry!. Trim; crimp edge as desired!. Line unpricked pastry with a double thickness of foil!. Bake in a 450 degree F for 8 minutes!. Remove foil!. Bake for 4 to 5 minutes more or until pastry is set and dry!. Remove from oven!. Reduce oven temperature to 325 degrees F!.

Meanwhile, in medium bowl stir together eggs, half-and-half, green onions, salt, pepper, and nutmeg!. Stir in ham!. In a small bowl toss together the cheese and flour!. Add to egg mixture; mix well!.

Pour egg mixture into hot, baked pastry shell!. Bake in the 325 degree F!. oven for 40 to 45 minutes or until knife inserted near center comes out clean!. Let stand 10 minutes before serving!. Makes 6 servings!.

A spanish Tortilla!.

Have some potato slices (not as thin as chips) and fry them for a very short time!.

Fruit some onion and garlic, add tomatoes, peppers, (corn), mushrooms, ground beef if you like (you can pretty much add anything)!. Then add the potato slices and mix everything around so it's all even!.

Then add the stirred content of about 3-4 egg yolks, depending on how big your pan is!. Let the bottom half get all sturdy, and then flip it over!.

Add pepper/salt/herbs as you like as well!.

Egg salad:
5 hard-boiled eggs, chopped
Mayo to moisten
Salt & pepper to taste
1 Tbs mustard
1/4 tsp paprika

Blend thoroughly, heap onto bread, top with another slice of bread and eat!. YUM



Creamed Eggs:
6 hard boiled eggs
Cream sauce (can substitute packaged Hollandaise sauce)
Toast

Open the eggs, removing the yolks; crumble the yolks & set those aside!. Chop the whites, and blend them into the cream sauce!.
Pour the cream sauce over two slices of toast, sprinkle with the yolks!. YUM

My mom makes!.!.!. starts with an "F"!.!.!. anyway they have a lot of vegetables but taste quite good!. She puts spinach, tomatoe, sometimes mushroom, and a lot, so the egg doesn't overpower any of the flavors!.!.!. and i think she uses goat cheese but you can use different kinds!.

Oh, and my dad makes this awesome egg dish!. It's called a Bird's Nest!. Here is how you make it:

1!.You take a slice of bread, and make a hole in the middle!. It's best to use the top of a small glass, preferably a shot glass!.
2!. Heat a pan on the stove, with butter
3!. Put the bread on the pan first, then, take an egg and crack it in the hole!.
4!. Wait for the egg to cook, and flip the bread!.!.!.
5!. When the egg is all done!.!.!. just take the bread/egg out of the pan, the egg should be in the bread and it's buttery and very tasty one of my favorite breakfasts!

You can try switching things up in your recipe!.
I make a cheese omlet- 2 eggs, 2 slices american, I put in some louisiana cajun seasoning, paprika, salt and pepper!. I top it with 2 teaspoons of salsa!. great twist on your everage cheese omlet!.
