Nice, easy veggie recipe?!


Question: Nice, easy veggie recipe!?
I've been a pescatarian since January and would like to make more vegetarian dishes, but i'm really unimaginative in the kitchen, can anyone suggest a nice, simple recipe, or point me in the direction of a good website!. I've looked at a few and the recipes all seem a bit complex with ingredients i doubt i'll find at Aldi!Www@FoodAQ@Com

Balsamic Portobello Steaks

Ingredients:

1/2 cup balsamic vinegar
1/2 cup olive oil
1/4 cup fresh lemon juice
1/4 cup chopped fresh flat-leaf parsley
2 garlic cloves, minced
6 large, fresh portobello mushroom caps, each
about 1/4 lb!., brushed clean
Directions:

In a large, shallow, nonreactive bowl, stir together the vinegar, olive oil, lemon juice, parsley and garlic!. Add the mushrooms and turn to coat!. Let stand at room temperature for 1 hour, turning once!. Drain before grilling!.

Prepare a charcoal or gas grill for direct grilling over medium-high heat!. Oil the grill rack!.

Place the mushrooms, gill side down, over the hottest part of a charcoal fire or directly over the heat elements of a gas grill!. Cook, turning once, until moist on the underside and just firm to the touch on the top, 4 to 6 minutes per side!.

Arrange the mushrooms on individual plates and serve hot!. Serves 6!.

Vegetarian Black Bean Burrito

Ingredients

* 1 whole wheat tortilla per person
* 1/2 c!. fat free refried beans (black or pinto) per person
* 1-2 tomatoes
* 1/8 avocado per person
* Broccoli sprouts
* Baby spinach (optional)
* Grated cheese (optional)

Take a tortilla and fill it with about 1/2 c!. of beans!. Dice your tomato and add as much as you want!. Add about 1/8 of the avocado!. Then add some broccoli sprouts!. If you want, wash the spinach and add some!. Last add the grated cheese!. Fold up the tortilla, microwave it for 1 min, and enjoy!.

Tips
You can substitute alfalfa sprouts for broccoli sprouts if you wish!. Broccoli sprouts pack even more antioxidents than broccoli so if you are not good at eating your broccoli, they are a fantastic choice!.

When shopping for tortillas, check the nutrition information!. Find some without trans fats and shop around to find the tortillas with most fiber!.

You can substitute corn tortillas for whole wheat tortillas if you do not eat wheat!.Www@FoodAQ@Com

It takes a little while but isn't really hard :) I'm not vegetarian and still make this all the time!.!.!.

root veggie stew!.

about 5 to 7 cups of diced root veggies!. 3 or 4 of the following will do (carrots, taters, celery root, parsnips, rutabega, turnip, beets etc)
1 big onion diced
few cloves of garlic minced (as much as you like)
1/2 cup pearl barley
2 cups shredded cheddar
some oil, couple tbsp for searing!.
1 cup tomato sauce
1 cup stock (veggie) water will work of you don't have it

preheat oven to 350

In a big soup pot sautee your onion, garlic and root veggies until softish!.

add barley and stir around to coat in oil

add tom sauce and stock and 1/2 the cheese

put lid on and chuck in oven for about 45 mins

take out (careful, hot!) and put remaining cheese on top, put back in over uncovered for another 10 or 15 mins until cheese melts!.

amazingly good!.!.!. you wont believe it doesn't have meat :) serve with garlic bread or a tossed salad!.!.!.Www@FoodAQ@Com

risotto and pasta can be made with almost anything!.
stuffed tortillas baked with cheese on top!. (i've recently made this with tomato sauce with peppers, potatoes and veggie meat (tesco brand) and it was really nice!.
another idea might be couscous - mix cous cous with spices and raisins/nuts and add hot stock!. leave to stand for 15 minutes!.quickly fry pieces of vegetables in a very hot pan and mix into the couscous!.
you could also make vegetable soups and eat them with bread!.Www@FoodAQ@Com

1 swede
1 whole cabbage
1 pound of carrots
1 bag of peas [fresh is possible]
6 red and green peppers
5 onions
4 cloves garlic
2 marrows split
8 corgettes sliced thin
1 pound fresh pick't runner beans
8 large pottoes

slice all with a careful paring knife - place together with the English herbs in a bunch of the thyme, rosemary and bay!. Cover with boiling water and slowly boil to simmer for several hours to make English pottage!.

The above is my approx version of a Tudor Pottage as enjoyed by the Commoners of England during the reign of King 'Enry 8th - the people ate little meat save perhaps at Christmas when the lord of the manner might provide pork fat!.Www@FoodAQ@Com

BROCCOLI CAULIFLOWER SALAD

1 head broccoli
1 head cauliflower
1 med!. onion
1/2 c!. bacon bits
2 c!. salad dressing
1/4 c!. Parmesan cheese, grated

Chop broccoli and cauliflower into bite-size florets!. Mince onion and add to broccoli mixture!. Stir in bacon bits!. Stir together salad dressing and Parmesan cheese and mix into salad!. Chill and serve!.

Makes 12 servings!.

Take a large potato and wash it,do not skin it!.
With an apple corer bore a hole through its centre longways and do the same centrally but vertically!.
Fill the holes fully with a soya mince that has been mixed with your favorite herbs!.
Cook in the oven untill the skin is brown!.about one hr!.
Serve with any veg you like!.

Vegetables are so versatile, it doesn't take a chef to cook with them!. Just take a bunch of veggies you like, grill them in a pan with a little salt and oil and put a sauce over them!. A good starter would be ratatouie!. Try googling it for a recipe!.Www@FoodAQ@Com

Go to your market, buy what is in season, bring home & cook!.
You have a choice of several basic methods for veggies:

green beans w/ garlic
cook the beans drain then stir fry them in olive oil with garlic add salt to taste
cucumber salad- slice cucumbers, red onion and mozzerella cheese toss with italian dressing
