Hawaiian Chicken

"This was given to me by my best friend years ago and is a favorite of our family!"



INGREDIENTS
6 skinless, boneless chicken breast halves
2 cups teriyaki sauce, divided
6 pineapple rings
1/2 cup butter, melted
3/4 cup packed brown sugar
3/4 cup soy sauce
3/4 cup unsweetened pineapple juice
6 tablespoons Worcestershire sauce



DIRECTIONS
1) Place the chicken breast halves in a dish with the 1 1/2 cups of teriyaki sauce!. Cover and refrigerate 8 hours or overnight!.


2) Preheat a grill for high heat!.


3) Lightly oil the grill grate!. Place chicken breasts on grill, and discard marinade!. Cook for 8 minutes per side, or until juices run clear!. Brush with the remaining teriyaki sauce during the last 5 minutes!. When almost done, place one pineapple ring on top of each breast, and brush with melted butter!.


4) In a small saucepan over medium heat, mix the brown sugar, soy sauce, pineapple juice, and Worcestershire sauce!. Cook, stirring occasionally, until sugar is dissolved!. Serve with chicken for dipping!

Crispy Coconut-Crusted Shrimp Stuffed with Pork Hash


Pork Hash:
1 lb Ground Pork
3 oz Diced Water Chestnuts
4 oz Diced Green Onion
2 oz Sesame Oil
1 oz Dry Sherry
2 oz Corn Starch

Mix all ingredients together (corn starch last) and then mix well!. Put aside

Shrimp:
1 lb Shrimp (Peel & Divide)
1 C Flour
2 C Eggs Whipped
1 C Coconut Flakes
1 C Panko

Mix coconut flakes & panko together well!. Next place 1 t of pork hash mix on shrimp and dredge in flour - making sure it is well coated - shake of excess flour!. Dip in egg mixture and then place shrimp in coconut panko mixture until coated!. Deep fry on medium temperature until golden brown!.

Cilantro Sweet Chili Aioli Sauce:
2 Egg Yolks
4 Garlic Cloves
? oz Wine Vinegar
? oz Water
? t Chinese 5 Spice
3 oz Cilantro Leaves
? oz Green Onion
? C Sour Cream
? C Milk
? t White Pepper
2 C Olive Oil
1 C Sweet Chili Sauce

Combine yolk, garlic, vinegar, water, and Chinese five spice in a bowl and whip until foamy!. Add oil whipping constantly until mayonnaise is thick!. Add remaining ingredients to mayonnaise!. Place in blender and blend until smooth!.Www@FoodAQ@Com

Chicken Char Siu



Ingredients
1 tablespoon grated peeled fresh ginger
2 tablespoons low-sodium soy sauce
2 tablespoons hoisin sauce
1 tablespoon honey
1 garlic clove, minced
1 1/2 pounds skinless, boneless chicken thighs, cut into 18 strips
Cooking spray


Preparation
Combine all ingredients except the cooking spray; marinate in refrigerator for 2 hours!.
Preheat broiler!.

Thread 1 chicken strip onto each of 18 (6-inch) skewers, reserving marinade!. Place skewers on a broiler pan coated with cooking spray; broil 6 minutes!. Turn skewers over; baste with reserved marinade!. Broil 6 minutes or until done!.

Ingredients
1 (6-ounce) can pineapple juice
1 package dry yeast (about 2 1/4 teaspoons)
3 cups all-purpose flour, divided
1/2 cup warm 2% reduced-fat milk (100° to 110°)
1/2 cup egg substitute
1/3 cup sugar
1/4 cup butter, melted
1/2 teaspoon salt
Cooking spray
2 tablespoons all-purpose flour


Preparation
Place pineapple juice in a medium microwave-safe bowl!. Microwave at high 45 seconds or until 100° to 110°!. Dissolve yeast in warm pineapple juice; let stand 5 minutes!.
Place yeast mixture in the bowl of a stand-up mixer fitted with a paddle attachment!. Lightly spoon flour into dry measuring cups; level with a knife!. Add 1 cup flour to yeast mixture; beat until combined!. Add warm milk, egg substitute, sugar, butter, and salt, beating to combine!. Add 2 cups flour, 1/2 cup at a time, until combined (dough will be very soft and sticky)!. Beat at medium-low speed 2 minutes!. Scrape down sides of bowl!. Lightly coat sides of bowl with cooking spray!.

Cover bowl with a damp towel!. Let dough rise in a warm place (85°), free from drafts, 1 hour or until doubled in size!. (Gently press two fingers into dough!. If indentation remains, dough has risen enough!.)

Preheat oven to 350°!.

Coat 2 (8-inch) round pans with cooking spray; dust each pan with 1 tablespoon flour!. Divide dough evenly between prepared pans!. Cover and let rise in a warm place (85°), free from drafts, 45 minutes or until doubled in size!. Bake at 350° for 30 minutes or until golden brown!.Www@FoodAQ@Com

Grilled Mahi Mahi with Pineapple, Mango and Tomato Salsa

INGREDIENTS:

For Mahi Mahi
2 8 ounce pieces of mahi mahi
1 teaspoon kosher salt
1 teaspoon of pepper

For Salsa
? pineapple, cored and sliced
1 tablespoon olive oil
1 whole mango, peeled and diced
? pint red teardrop tomatoes, cut in half
1 tablespoon cilantro

Procedure Mahi Mahi

Pre heat grill!.
Season mahi mahi with salt and pepper!.
Grill 4 minutes on each side or until done!.

Procedure for Salsa

In a large bowl combine pineapple, mango and tomatoes
