Apple Crisp

4 C sliced pared apples
2/3 C packed brown sugar
1/2 C flour
1/2 C uncooked quick cooking otats
3/4 tsp cinnamon
3/4 tsp nutmeg
1/3 C softened butter

Preheat oven to 375!. Place apple slices in an 8x8" greased pan!. mix rest & sprinkle over apples!. Bake 30 min or until apples are tender & topping is golden!. Is very nice served warm w/ice cream!.


Stuffed Autumn Apples
2 large Golden Delicious or Gala apples
1 to 1 1/2 cups apple cider
1 tablespoon firmly packed brown sugar
1/4 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
1/4 cup merlot
1 teaspoon sugar
1/4 cup graham cracker crumbs
1/4 cup sliced almonds
Granola Topping
Caramel Sauce

1!. Preheat oven to 350°!.

2!. Cut 1/8 inch from tops of apples!. Using a melon baller, remove core, cutting to but not through bottom of apple!. Hollow out apple, leaving a 1/4-inch-thick shell, reserving apple flesh for filling!. Place apples in a 9-inch baking dish, and fill apple shells with cider!. Bake 15 to 20 minutes, or until apples are slightly tender!. Drain, dicarding cider!.

3!. In a small saucepan, combine apple flesh, butter, brown sugar, vanilla, and cinnamon!. Cook, over medium-high heat, about 5 minutes, or until apple flesh is tender!.

4!. In a small skillet, combine cherries, merlot, and sugar!. Cook over medium heat, 3 to 4 minutes, or until wine is absorbed!. Add cherry mixture to apple mixture, stirring to combine!. Stir in graham cracker crumbs and almonds!. Spoon filling inside prepared apples!. Sprinkle with Granola Topping, and serve with Caramel Sauce!. Yields 2 servings

Snickers stuffed apples
Snickers bars make a delicious dessert!. Simple chop them up with the food chopper!. Peel, core and slice a few apples!. Place them in a baking dish and sprinkle the chopped candy bars over the apples!. Bake at 350 for 15 minutes!!! Serve alone or with vanilla ice cream!. Yum

I only get to make stuffed apples once a year - on New Year's Day - the husband doesn't care for any fruit but I make him eat some form of stuffed apple!


Harvest Baked Apples

8 medium baking apples
1 cup apple or orange juice
1/4 cup firmly packed brown sugar
1/2 tsp!. ground cinnamon
1 cup (4 oz!.) shredded CRACKER BARREL 2% Milk Reduced Fat Sharp Cheddar Cheese
1/4 cup raisins
1/4 cup PLANTERS Chopped Pecans, toasted

PREHEAT oven to 350°F!. Remove cores from apples to within 1/2 inch of bottoms of apples; pierce the skins with a sharp knife!. Place apples in shallow baking dish!.
COMBINE juice, sugar and cinnamon; pour over apples!.
BAKE 30 to 35 min!. or until apples are tender, basting occasionally with the juice mixture!. Remove apples from oven!. Combine cheese, raisins and pecans; spoon evenly into centers of apples!. Let stand 1 min!.

Substitute POST GRAPE-NUTS Cereal for the pecans!.

Diet Exchange: 1/2 Starch,2 Fruit,1 Fat


Baked apples
Core apples, & peel 1 strip of skin around the middle of each!. Fill with 2 ts sugar, dash (1/8ts) cinnamon, 1 ts butter!. Pour 1/4" water into dish, and bake 30-40 min at 350!. Or until tender!.

My MIL used to make this apple dessert - I do not know how - it was apple pie filling wrapped in a toritilla roll up & drizzled with carmel sauce!

APPLE POCKET PIES

4 flour tortillas
2 apples
1/4 teaspoon ground cinnamon
2 Tablespoons brown sugar
1/8 teaspoon nutmeg
Milk
Sugar (optional)

Warm tortillas in microwave to make them easier to handle!.

Chop apples into small pieces!. Place 1/4 of the apples on half of each tortilla!.

In a small bowl, stir together brown sugar, cinnamon and nutmeg!. Sprinkle over apple!. Roll up the tortillas, starting at the end with the fruit!.

Place on an ungreased baking sheet and make small slits to allow steam to escape!. Brush with milk and sprinkle with additional sugar, if desired!.

Bake in a 350 degree oven for 8-12 minutes or until lightly brown!. Serve warm!.

Makes 4 servings
