COOKING is the denaturing of protein whether it's done with heat, sugar, salt, or a marinade (something acidic like limes or lemons, usually)!. In the case of ceviche, it's the marinade that COOKS the seafood!.

last time I looked a ceviche was not exactly a peruvian dish ,but if you want to do one ,use fresh lime juice ,a bit of corriander,thyme ,onion,sliced way thin a couple garlics crushed and minced with salt(kosher)and some parsely or a leaf or two of bruised mint ,as for the fish use the freshest fish you can find ,and make certain there is no fat left on it and pull the skin off as well white fishes work very well in this form ,of prep and also most shell fish except for bivalves!. Cod ,roughy ,halibut ,sea bass et!.c all work well in a ceviche but the main thing is the fresh Lime juice and just a bit of salt -good luck and have fun with itWww@FoodAQ@Com

Ceviche is raw fish which has been marinated in citrus juice!. The citrus makes the protein in the fish denatured, which pickles or cooks it without having to heat it!. Lime juice, coriander, onion and chilli are added to the raw fish!. Delicious!.Www@FoodAQ@Com

Ceviche isn't "cooked"!.!. it's raw seafood marinated in lime juice!. The acid from the lime will kill any bacteria on the surface!. Use sashimi grade seafood for this!.Www@FoodAQ@Com
