start with small amounts and see how you like what you make!. the really great thing about cooking is you can make anything with the foods and spices and seasonings you like!.

i own several cook books that i only use as references and guides to what i want to cook!.

for split pea soup i would chop anything i put in there pretty small because the peas will turn to mush as they cook!. the thing about soup!? anything you put in it should fit nicely on a spoon!. no huge chunks!.

one small onion
1 or 2 carrots
celery

saute them in some oil until the onion is tender but no color!. add diced smoked ham and saute a few more minutes!. sauteing brings out the flavors of the ingredients!.

add about 4 cups of water and 12 ounces of split peas!. experiment! add some garlic cloves to the saute either minced or whole and discard it later!.
simmer for a couple of hours stirring every 15 minutes or so and add more water when needed!. it will get thick and by adding more water you can make it the consistancy you like!.

i would use salt sparingly because there is salt in the ham!. i would add a laurel leaf (bay leaf) because i love the flavor it adds to soups!. a little black pepper too!. i promise it will taste good!.

Split Pea Soup with Ham Hocks

1/4 cup olive oil
1 large onion, finely diced
2 celery stalks, finely diced
2 carrots, finely diced
1-pound bag split peas, rinsed and picked through
1 1/2 pound smoked ham hock
2 quarts chicken stock, water, or combination
Salt and freshly ground black pepper


In a large saucepan, saute onion, celery and carrots over medium-high heat!. Add peas and ham hock and cover with stock by a couple inches!. Bring to a simmer and cook about 1 hour until soup is thick and peas have almost disintegrated but not quite!. Season, to taste, with salt and pepper!. Remove ham hock and let cool!. Pull meat from ham hock bone and shred!. Garnish with ham and pepper!.Www@FoodAQ@Com

If the ham is on a bone put it in water and simmer it an hour at least to make broth!. Then add dried peas, some chopped onion and simmer till the peas are cooked and it gets thick!. I usually don't add much water at the start and thin it down to the consistency I like, which is pretty thick!. If your ham isn't on a bone just cook the peas in water and dice up the ham and throw it in!. One of my favorite soups, by the way!.Www@FoodAQ@Com

you have to have a ham bone, or ham hock if you can't find the bone!. Just cook dried split peas , and one chopped onion with the bone (careful not to over cook peas) when peas are almost done remove about 1 to 1 and 1/2 cups of the peas!. Continue cooking the rest of the peas for about another hour!. Return the peas and one chopped carrot, cook for 30 minutes more!. remove the meat from the bone, season with salt and pepperWww@FoodAQ@Com

Ham shank
Cup split peas (soaked)
2 leeks
1 pound carrots
0!.5 pounds swede
2 stalks celery
Method:
Place ham shank in large pan, cover with water, bring to boil!. Skim!. Add chopped celery stalks, 1 chopped carrot, green part of leeks!. Simmer for 1 hour!. Cool and strain reserving liquid!.
Chop finely carrot, swede and leek, sweat in butter for 1 minute!. Add reserved stock and soaked peas!. Bring to boil and simmer for 30 minutes!. Whizz and serve!. (If you want it super hammy whizz some of the meat - or you can serve it as a main course)Www@FoodAQ@Com

A handful of split peas,a litre of water, pepper,a couple of stock cubes (oxo) a couple of teaspoons mixed herbs
Two or three rashers of smoked bacon!.

GREEN PEA AND HAM SOUP

4 c!. chicken broth
1 lb!. frozen peas
2 tbsp!. light cream
Salt and pepper
Pinch of sugar
1/4 lb!. cooked ham

Time: 15 minutes!. Freezing suitable!. Serves 4!.
Put the broth and the peas in a large bowl!. Cover and cook on high for 10 minutes!. Reserve 1/3 of the peas!. Puree the remaining peas in a blender or by passing through a sieve!. Return the pureed peas and the reserved peas to a bowl!. Stir in the cream, sugar, salt and pepper!. Dice the ham and add!. Cook on high for 5 minutes, then serve hot!.Www@FoodAQ@Com
