Mashed Potatoes
4 pounds russet potatoes, peeled and cut in half (about 6 potatoes)
8 tablespoons (1 stick) unsalted butter, cut into chunks
? cup whole milk
Salt and freshly ground black pepper to taste
Place the potatoes in a large saucepan and add enough cold water to cover by 2 inches!. Bring to a low boil and cook, uncovered, 25 to 30 minutes, until the potatoes are tender when pierced with the tip of a sharp knife!. Drain the potatoes and return them to the saucepan while still warm!. Add the butter and milk and mash with a potato masher until all the butter and milk are incorporated and the potatoes are creamy!.

I always make my own, then freeze any excess!. I make it by mashing thoroughly first, *then* adding butter and milk!. Trying to mash after adding 'lubricants', so to speak, makes it far harder to remove all the lumps!.
On occasion I make it with creme fraiche, or soured cream and sprigs of spring onion, possibly chopped chives also!. Some people swear by adding nutmeg instead, but I've never seen the attraction!.
As it happens, I recently read a recipe that proposes adding apples to mash for pork dishes!. I've linked to it here, http://uktv!.co!.uk/food/recipe/aid/513989 !. The first four steps concern the apple mash!. I was thinking of trying it myself this weekend, with sausages!.
Oh, almost forgot: I always add salt to my mash, ideally sea salt!. I know it sounds pretentious, but sea salt is less sharp, yet somehow saltier - definitely well suited to potatoes!.Www@FoodAQ@Com

ewww - I can't understand how anyone could eat instant mashed potatos! I am definately a homemade mashed potatoes girl! I mash them up with butter, milk, salt and a touch of gin (makes them white and fluffy)!. If they are going on top of something (ie shephards pie) then I add some cheese to the mix and let it melt in!. If I am feeling fancy I will substitute the milk for some sour cream and add some chopped chives - but I usually prefer them plain!Www@FoodAQ@Com
homemade with red potatoes and extra lumpy! more like smashed potatos! instant arnt thhhhhat bad with lots of butter and whole milk and garlic powder!.but better then instant are the ones by country crock!. you should try them with this reallly good pot roast with au jus (don't know the brand but its next to those mashed potatoes in the refridgorated section at walmart), you put it in the mic for 4 mins and it tastes like you cooked it alll day, and a can of green beans and you have dinner in 10 mins!!!Www@FoodAQ@Com
