and my question is, how many pasta, fruit, and veggie dishes can you make before you've made them all!? What are our options!? We don't eat red meat and 'some' chicken!. We're not into soy or tofu!.Www@FoodAQ@Com

How about brown rice, barley, bulgur and lentil dishes!? There are some great hearty casserole recipes using these as main ingredients and they're all better for you than pasta!.

Eggplant, Portobello Mushrooms, and Beans help make dishes feel more filling without meat!.

I, too, try to stay away from processed foods!. The possibilities are endless when it comes to cooking!. Try to shop in the outside aisles of the supermarket - fresh fruit, veggies, seafood, chicken etc!. Try to avoid the center aisles - canned & packaged goods!. Read the labels!. Try going to a local Farmers market, & shopping there!. Experiment with new fruits and veggies - zuchinni blossoms, mangos, papaya, kiwi!. Buy fresh (produice) instead of frozen - broc, green beans, asparagus, artichokes, vine-ripened tomatoes, avocados, brussels sprouts, & green leafy veggies (to name just a few)!. Roast your veggies w a little evoo, s&p, & throw in a head of garlic!. Make stir-fry dishes w fresh veggies, chicken, seafood!. Homemade pasta is delish!. If you don't have the time, try whole wheat pasta!. You don't need to be a vegtarian to eat healthy!. Use fresh herbs in cooking to enhance the flavors of your dish!. Any citrus (lemons, limes, oranges) will enhance/boost the flavor!.Www@FoodAQ@Com

Go to the library and get a few vegetarian cookbooks!. You'll find that there are so many ingredients, oils, herbs and spices (and combinations thereof) that you won't know where to start!. And don't worry about soy!.!.!.it can always be left out!. Good luck eating better!Www@FoodAQ@Com

why not research a culture which is known for being largely vegetarian, for instance certain hindus do not harm animals and devout buddhists likewise do not eat meat!.

i find greek cooking to be largely vegetarian, involving lots of pulses and roasted vegetables!.Www@FoodAQ@Com
