Question: Veggie lasagna with what I have!?
Hey there, so I want to make some veggie lasagna, I am not able to run to the store, so will I be able to make it with what I ahve!? Or what can I make with what I have!? I have 1 yellow squash, 1 green squash, acorn squash, spagetthi squash, cottage cheese, tomato, onion, pepper, lasagna noodles, nad tomato sauce, pinto beans, black beans, and mozeralla cheese!? Cna I make a decent veggie lasagna with this!?Www@FoodAQ@Com

here's the thing with lasagna!.!.!.it's just layered items!.!.!.

I would probably not use everything you have!.!.!.

I think I would take the squashes, (not the spaghetti squash) and the tomato and onion!. Cut them up in slices, toss them in olive oil and salt and pepper!. Then I would roast them in the oven at 450 until they are soft!. As far as the acorn squash goes, if you roast that make sure that you take the skin off once it's been roasted!.

Get your tomato sauce and season it with some Italian seasoning, salt and pepper!.

Once you are ready!.!.!.layer the noodles, sauce, cottage cheese, roasted veggies and then top with mozzarella cheese!.


Then I would cover it with foil and bake her up at 350!.!.!.until it gets bubbly, then I would remove the foil for the last 10 minutes and let it get brown on top!.Www@FoodAQ@Com

I'd sautee the onion and peppers in olive oil and add them to the tomato sauce with any spices/herbs you might have like basil, italian seasoning, orgegano, garlic powder or garlic salt!.
Then I wouldn't cook the noodles nor the other vegetables!.
Layer some sauce in the bottom of a greased pan!.
Lay a few slices of the squashes (yellow and green) in the tomato sauce!. This will keep the noodles from sticking!.
Make a layer of uncooked noodles!.
Top with sauce!.
Then make a layer of cottage cheese!. (I'd mix the cottage cheese with egg and parmesan cheese if you have it)!.
On top of the cottage cheese, layer the green and yellow squashes!.
Now if you want to choose one of the beans, now would be a good time!.
Next make a layer of mozarella cheese!.
Repeat layers 2-3 times!.
Bake @ 375 degrees COVERED for 45 mins!. Uncovered 15!. Let rest 10 minutes before cutting!.Www@FoodAQ@Com

I'm not sure I would choose veggie lasagna with those ingredients!. Do you have an egg!? If so, the cheeses plus egg and fresh parsley could make up your cheese layer!. But you're going to need some herbs in there to make it worthwhile !.!.!. and garlic!.

With these ingredients, there are two recipes I can think of that would be good -- one is Joe's black bean salad and the other is Summer squash salad -- both are on a family recipe blog I like to go to!. Here's the link:

Of the two, I like the summer squash salad lots!. It's one of those guilt-free dishes that really packs a lot of flavor!.

SUre! Cook your noodles!. Saute your squash(say 4 cups total), tomato, onion and pepper!.
Layer the vegetables with the tomato sauce (seasoned) cottage cheese and mozzarela and noodles!. Repeat layers and bake until bubbly!. Add another layer of mozz the last five minutes!.
