Question: My aged balsamic vinegar is very sweet and has lots of sugar in it!!?
is this normal!? I've seen balsamic vinegar with no sugar in the nutritional info, but this aged balsamic has sugar in the nutritional info!. It's not in the ingredients, so is this normal!? thanks!.Www@FoodAQ@Com

That is what it is supposed to be!

When Balsamic vinegar ages in oak barrel, the natural enzyme action makes vinegar thicker and sweeter!. I have a bottle of 20 year old vinegar!. It is quite thick (consistency of pancake syrup) and lightly sweet!. I have tasted 150 year old one not too long ago!. This one was even thicker and sweeter!.

What most grocery store sells as Balsamic vinegar is nothing more than flavored wine vinegar!. What you and I are talking about is the real thing!. A good (and real) balsamic vinegar is supposed to be not that acidic, somewhat to quite sweet, and not so tart!. Some people put this stuff on strawberry and ice cream!.!.!.!. (I do not)
