Question: Why must you let sushi rice drain completely (30min to an hour) before tossing right back into water to cook!?
What does this do!? What would happen if I didn't drain the rice!?Www@FoodAQ@Com

I wouldn't let it drain completely, really the only reason you rinse the rice is to remove any excess starches from the rice, which if you didn't rinse off, would make the rice too gummy!.
What I do is, get a tall pitcher or jug, & fill with 1 part rice to 3 parts water, drain & repeat untill the water is not cloudy anymore, ussually 3 or 4 times!.
also, be sure NOT to salt your sushi-meshi when you cook it!.Www@FoodAQ@Com

You rinse it and drain it to remove the excess starch!. If you don't drain the water you rinsed it with, the starch will stay with the rice when you cook it and defeat the purpose of rinsing the rice!.Www@FoodAQ@Com
