Question: What can I add to chocolate to make it less melty!?
I'm trying to make chocolate covered candies, and I'm having trouble getting the chocolate to stop melting everywhere! I have even put it in the fridge to let it 'set!.' Help!Www@FoodAQ@Com

Take canning (parafin) wax and shave a little off (2 tablespoons) with a cheese grater!. Let it melt into the chocolate!. The chocolate will set up easier and stay firmer!. You can buy the wax at the grocery store next to the canning supplies!. It's pretty cheap too!.Www@FoodAQ@Com

Yes,add paraffin(wax)!.Can purchase at the supermarket!.Only need a very small amount!.I use it in my candy making!.

Don't know what kind of chocolate you used!.Even chocolate morsels set up in the refrig and stay pretty solid!.Www@FoodAQ@Com

sone recipes actually have paraffin in them !.!.!.!.!. in fact, alot of cheap candy (See's, is one) have that crisp outer chocolate coating, that has paraffin in it!.!.!.!.!.!.!.Www@FoodAQ@Com

ok!. for the chocolate sauce (ganache), did you include cream!? this will helps to thicken the chocolate texture!. quickly if not the chocolate will become truffle not sauce (ganache)!.Www@FoodAQ@Com
