Burgers falling to bits-any ideas folks??!
I like to make my own burgers ,some times with raw mince & sometimes leftover meat from a joint or cooked chicken!. My problem is even if I chill them or freeze them they alway fall to bits when I come to cook them!.Anyone know why!?And can anyone tell me what to do to prevent this!.Please help!.Www@FoodAQ@Com

With the raw mince you need to add on egg and breadcrumbs!.
With cooked meats I combine them with eggs and left over potatoes to make patties or croquettes!.Www@FoodAQ@Com

I personaly like to take Hamburger ,mince up some green bell pepper ,Onion ,garlic , a half cup to 1 cup of minute rice cooked and drained !.and a second meat chopped up like chicken ,Smoked sausage,Ham or bacon aste great then add one to two eggs depending how much your making!.

I use egg to bind the meat to gather!.
I usually use mince beef, an egg, some breadcrumbs, finally chopped onion, gherkins & a good helping of wholegrain mustard!. I can not remember the quantites as I have done it so many times I just eye up what I need!.Www@FoodAQ@Com

I use an egg to bind them!. If you're using the BBQ, they have wire contraptions with a handle; 2 wire squares that open up and you can put the burgers in between; Then you just flip the whole thing over and it keeps them together (good for fish too)Www@FoodAQ@Com
Add egg to bind them or bread crumbs to make them stick together!. Make sure the mince isn't too fatty or the peices of meat (or onion or whatever else you put in them) too large!. When cooking them don't move them around too much and be gentle!.Www@FoodAQ@Com
Yes Egg and put some bread crumbs in too, this will help hold together, also I find that if you are BBQing them, youcan get a "holder" to hold 4 at a time - it is like a cage with a long handle and you can just flip it as necessary!.Www@FoodAQ@Com
As above, add egg and breadcrumbs!. However, make sure that you break up the mince before shaping it, and really squeeze it hard into a ball (imagine it's someone you don't like!) before reshaping it into a disc!.Www@FoodAQ@Com
If you don't have an egg, or don't like them, use breadcrumbs, a little milk and a good helping of grated cheese!. also, chop the onion up quite finely, otherwise it always falls out and is often undercooked!.Www@FoodAQ@Com
