Pure maple syrup, as opposed to artificially flavored and colored "pancake" syrup, is an extraordinary cooking ingredient!. Here it adds body as well as rich flavor to the dressing, providing a perfect counterpoint to the smoked cheese!.

Makes 4 servings, about 2 cups each

2 tablespoons chopped pecans
1 10-ounce package fresh spinach, torn, or 12 cups baby spinach
1 cucumber, peeled, seeded and cut into 1/4-inch slices
2 teaspoons extra-virgin olive oil
1 shallot, finely chopped
1/4 cup cider vinegar
2 tablespoons pure maple syrup
Salt & freshly ground pepper to taste
1/4 cup shredded smoked cheese, such as Gouda or Cheddar

1!. Toast pecans in a small dry skillet over low heat, stirring often, until fragrant, 2 to 3 minutes!. Transfer to a small bowl and let cool!.
2!. Toss spinach and cucumber in a salad bowl!.
3!. Heat oil in a small skillet over medium-low heat!. Add shallot and cook, stirring, until softened, about 4 minutes!. Add vinegar and maple syrup and bring to a boil!. Season with salt and pepper!.
4!. Immediately pour the dressing over the spinach and cucumber!. Toss well and sprinkle with cheese and toasted pecans!.

Baby spinach, baby corn on the cob from a can-chilled, diced red onions, Craisins (Dried sweetened cranberries)!. Dressing of Honey mustard!. Croutons of dark rye bread, butter done in a pan on the stove for 3 minutes!. Finish with garlic salt and onion powder!.

This is excellent with chicken or pork as a main dish!. I really like this with turkey legs smoked on the grill with applewood then coated in Rufus Teagu BBQ sauce-Touch o heat flavor

I love love spinach!. I usually throw in some grilled chicken, strawberries or tomatoes, raisins, sunflower seeds, cucumber, granny smith apples and Marzetti's Hot Bacon Dressing!.!.just nuke the dressing in the oven for about 20 seconds and toss it all together!. You may also like just vinegar and oil!. If you like feta or bleu cheese that's a nice touch too!.

1/2 cup toasted almonds (it takes a few minutes in the oven)
1/4 cup sugar
1/4 cup vinegar
1/4 oil

1 bag spinach

Mix the dressing!.
add to the spinach, mix and add almonds and oranges!.

Stir-fry chopped pecans in sugar, until the sugar melts & coats the pecans!. Toss the pecans, some sliced red onion and fresh raspberries (or sliced strawberries) with Raspberry-Pecan or Raspberry-Walnut vignarette !.!.!.!.!.

You can also stir-fry sliced almonds instead, and use drained mandarin oranges, with Girard's Champagne dressing or Balsamic VignaretteWww@FoodAQ@Com
